Super Easy Chicken and Dumplings

Like another reviewer, I am from the south and am used to my mom's homemade dumplings. Since this recipe uses biscuits, I simmered them about 40 minutes to get them as soft as possible. There is just no way a canned biscuit is going to taste exactly like a dumpling. That being said, I am giving this recipe 5 stars because the biscuits are close enough if cooked long enough, the family all said "yum!" and my kitchen counter was not covered in sticky flour after the cooking process! I made a bag of frozen mixed veggies on the side so that everyone could choose whether to have their veggies on the side or mixed in. Will definately do this again!

Chili Macaroni Casserole

This was very good, but as a cheese-a-holic, I thought it needed more in the macaroni layer, as well as on top. Maybe 2 cans of soup next time, or more shredded cheese? This makes a TON. It almost didn't fit in my jumbo lasagna dish, lol.

Tender Italian Baked Chicken

My bread crumbs did not "solidify" in the 20 min baking time. I was afraid to over-bake because I hate tough chicken. The flavor was delicious though! Might try a different bread coating next time, like the croutons someone else suggested.

Beefy Cheese Dip

BEST meat/cheese dip I have ever had. I used hot italian sausage (taken out of the case) and mexi-velveeta. It was spicy, but we love it that way!

Clam Sauce with Linguine

This recipe had so many mushrooms I couldn't find the clams! Next time I will cut the mushrooms by half and add a splash or 2 of white wine. Good basic recipe tho!

Eileen's Meatloaf

I am a collector of meatloaf recipes because my hubby loves them, and this one is really, really good. I made four small loaves to decrease baking time, and made a quick sauce on top of the stove with a can of cream of mushroom soup, some sherry, and some half-n-half. Yummy!!!!!

Yellow Squash Casserole

The BEST squash casserole I have had to date! I reduced the milk and butter a bit, because I like mine a bit drier - and cooked the squash and onion until they were mushy, to make more of a souffle. Fab-U!

Angel's Old Fashioned Beef Stew

I followed the directions exactly and found that I did need to thicken it. I agree with those who think it needs spices. Ironically, my potatoes did not evercook, but my carrots did. This is one I think you will have to play around with to get just right, but it's a great base recipe.

Baked Dijon Salmon

The best thing about this recipe is that it is so easy to double or triple if you are feedinf salmon to a crowd. I fed 13, using 5 lb salmon, and it was awesome! I think next time I will try fresh bread crumbs rather than the kind in the box, and crank maybe broil it a minute to get them crunchy. Love this marinade!!!!

Irish Chicken and Dumplings

The flavor of this dish is really good, however I do not like the mixture of potatoes and dumplings. I would prefer dumplings only, because they are soooo good with the bisquick! Thank you for sharing.

Easy Apple Coleslaw

This was too sweet for me, so I added an extra tbs of vinegar, and a couple more onions. It definately got better as it sat, so I would recommend making it in the morning, or even the night before. Next time I will just use less sugar, and not being a fan of apple peel, I will peel them next time. That said, it's a definate keeper!

Spicy Mexican Salad

This was a huge hit at the cinco de mayo party!!! Thanks for the tip about using hot-n-spicy fritos! I also made a dressing by mixing 1 cup of ranch with ine cup of salsa (because I can't find any spicy ranch in my area) it was awesome! Also added some red onion, black olives, and shoepeg corn. A total delight!
