Eggplant Sandwiches

Great use for eggplant and not the same ol' eggplant/mozzarella combo. My husband's allergic to eggs, so I replaced the mayo with garlic butter, spread on the bread and then put under the grill right at the end. For the tang of mayo, I used a little squeeze of lemon over the eggplant. Will definitely make again!

Chocolate Ganache Icing

Excellent ganache - better than the cake itself! I also added some vanilla essence, and used half dark and half milk chocolate. I can't imagine making it without the brandy - it adds extra depth and interest. Next time I might try orange brandy.

Eggless Whole Wheat Muffins

My husband's allergic to eggs, and this recipe has become the foundation of weekly muffin sessions! I add lots of other stuff - cinnamon and whatever fruit I've at hand that would be good in a muffin, but most importantly a heaping spoonful of runny honey mixed in with the sour cream. I've made these muffins for lots of people, and they've all been amazed that they're so moist and tasty without any eggs - plus they stay good for a day or two after baking (that's thanks to the honey). I think I've started an egg-free muffin trend in my part of the country!

Apple Pie by Grandma Ople

Best apple pie I've ever made - and I make a lot of pies! I added a bit of ground all-spice, as well as nutmeg and cinnamon, and the result really had a nice depth of flavor. This is destined to become a family favorite, and the most sought after pie at potlucks and family get-togethers.

Gypsy Soup

I followed the recipe, but no one was very impressed with the soup. We agreed that the bell pepper was a bit over-powering, and if I make this again I will probably leave it out. The next day I added chorizo, which seemed to make it more interesting, and competed well with the bell pepper flavor.

Red Kidney Beans (Rajma)

We had this on rice, and it was wonderful and surprising! I wasn't sure about all of the ingredients, and find that a lot of veggie recipes sorely lack for meat, but this curry tasted really fresh and satisfying. I will definitely make this again, especially for those friends who think that a meal isn't complete without meat.

Egg-free Brownies

These are excellent brownies! If you follow the recipe exactly, then you get first rate, honest to goodness brownies without a hint of eggs! These were a huge hit and I will definitely make these again and again!
