Smashed Cauliflower

my picky cauliflour-hating husband even liked it. I used a hand-blender to make it smooth, and found that that made it less runny than the time before when I just used the potato masher.

Spaghetti Squash Dip

awesome with a bit of garlic! I also used calorie-wise miracle whip instead of mayo, and it gave it a bit of a tang. will definitely make again!

A family staple, even my non-cooking husband can do this recipe! I never wait the time for the batter in the fridge, I just cook them. We wrap the extras in plastic wrap and store in the fridge (although leftovers are a rarity).

Hearty Multigrain Bread

I have made this many many times in my breadmaker. I use the breadmaker for a double batch of the dough, then knead, rise and bake 2 loaves. It is impossible to keep in the house as my family eats it so fast.

Mini Raspberry PHILLY Cheesecakes

These were pretty good. I used 1 Tbsp oreo cookie crumbs instead of the cookies suggested, and added about 1/2 tsp lemon juice to the mix before putting it into the muffin cups. (Maybe a bit more next time) I do not like a really heavy cheesecake, so these suited my taste. I will for sure make again.

Raspberry Oat Bars

These were the right mix of crispy and chewy and very tasty! I also added a pinch of cinnamon to the crust mixture, but used plum preserves because I didn't have raspberry, and they turned out really well. Will definately make again!

The Great Pumpkin Pumpkin Pie

Pumpkin Soup

My whole family loves it! I started with raw pumpkin and added 8 cups of raw cubed pumpkin instead of 4 cups puree, and it worked great! I just pureed it later on before adding the cream

Turkey Tetrazzini II

an excellent recipe!! I also added a bit of garlic, and chose to use all low fat ingredients (low fat broth, parmesan, margerine and skim milk). My husband gave it a gold star!
