Shortbread Cookies II

Reviewed: Apr. 5, 2013
Our go-to recipe for amazing shortbread!! I have made these as rolled cookies (using parchment paper to avoid sticking) and rolled them in logs and sliced them after chilling when I am pressed for time. We have never had them go wrong. A few tips: allow the butter to warm to room temperature before creaming (do not microwave!) and mix the dough with your hands after adding the flour to warm the butter and make it stick well together. Don't skip the chilling, and you'll get perfect flaky shortbread every time!

Smashed Cauliflower

Reviewed: Sep. 3, 2010
my picky cauliflour-hating husband even liked it. I used a hand-blender to make it smooth, and found that that made it less runny than the time before when I just used the potato masher.

Spaghetti Squash Dip

awesome with a bit of garlic! I also used calorie-wise miracle whip instead of mayo, and it gave it a bit of a tang. will definitely make again!

Crepes

Reviewed: Jul. 1, 2010
A family staple, even my non-cooking husband can do this recipe! I never wait the time for the batter in the fridge, I just cook them. We wrap the extras in plastic wrap and store in the fridge (although leftovers are a rarity).

Hearty Multigrain Bread

Reviewed: Jul. 1, 2010
I have made this many many times in my breadmaker. I use the breadmaker for a double batch of the dough, then knead, rise and bake 2 loaves. It is impossible to keep in the house as my family eats it so fast.

Mini Raspberry PHILLY Cheesecakes

Reviewed: Aug. 21, 2009
These were pretty good. I used 1 Tbsp oreo cookie crumbs instead of the cookies suggested, and added about 1/2 tsp lemon juice to the mix before putting it into the muffin cups. (Maybe a bit more next time) I do not like a really heavy cheesecake, so these suited my taste. I will for sure make again.

Raspberry Oat Bars

Reviewed: Feb. 25, 2006
These were the right mix of crispy and chewy and very tasty! I also added a pinch of cinnamon to the crust mixture, but used plum preserves because I didn't have raspberry, and they turned out really well. Will definately make again!

I added 1/8 tsp nutmeg because I didn't have any cloves and it was still great! I love the ginger flavor, and my husband had no idea that it was made with Splenda.

Pumpkin Soup

My whole family loves it! I started with raw pumpkin and added 8 cups of raw cubed pumpkin instead of 4 cups puree, and it worked great! I just pureed it later on before adding the cream

an excellent recipe!! I also added a bit of garlic, and chose to use all low fat ingredients (low fat broth, parmesan, margerine and skim milk). My husband gave it a gold star!
