New York Cheesecake I

simple. delicious. the original. easy to personalize with fruit, chocolate, whatever your heart desires. but honestly, i prefer it just the way the recipe makes it. definitely going to be my holy grail cheesecake recipe.

Blueberry Buckle

so so good. it's 90 degrees here today and i would turn my oven on all over again for this recipe. i used store bought blueberries (pint box), and added a tspn of vanilla to the batter. didnt have too much trouble mixing it, or spreading it. I popped it in the oven before i started making the topping. for that, i used - 1/2 cup light brown sugar, 1/2 cup oats, 1/2 tspn cinnamon and 1/4 cup cold butter. this came out amazing. a scoop of vanilla ice cream would be a nice addition but def not necessary. i used a round 9 inch pan. and baked for an hour (i added the topping on about 15 mins into baking, so that baked for 45 mins).

Pumpkin Ginger Cupcakes

best pumpkin flavored thing i've ever put in my mouth! just made these. sampled one mini cupcake.... had to have 2 more immediately after. totally doesn't need frosting but i'll probably make some cream cheese frosting II just to dress them up. I omitted the candied ginger (though, if diced well - i can see how that would be amazing in these!) and my supermarket only had sugar free butterscotch (which didnt come in a 3.4 oz package) so I subbed seasonal "limited edition" pumpkin spice instant pudding. YUM! the batter def wasn't "pour"able but it was still pretty easy to handle. I got 24 mini cupcakes, 6 reg cupcakes and a small pan out of one recipe. also, batter doesn't rise THAT much - fill the tins 3/4 full. So excited to get back to eating these, and bringing them to work tmrw!

Double Chocolate Mint Cookies

these are super easy to make and my coworkers all loved them. i halved the recipe and used a little less butter (1 cup instead of 1.25 cups). Also doubled the mint extract, and used MINI semisweet chips. I highly suggest you do the same three things - lil less butter, lil more mint, and MINI. i dont kno how well these last from day to day since they all disappeared within hours, but they def taste better 3 hrs later than they do straight out of the oven.

MMMMM... Brownies

really easy to make. i prepared everything in one pot. these are actually a lot better the next day, just make sure you store them in an air-tight container. otherwise they'll go hard fast. handed them out to over 10 ppl, and everyone raved. :)

French Apple Pie with Cream Cheese Topping

Made this for easter, everyone raved about it! i let the topping stand by the warm oven so it was very easy to apply; i also put a ring of dried cranberries around the sides. Then we popped it in the fridge for it to set, after 5 hours it looked so gourmet. A lot of people compared it to carrot cake but with apples. and MUCH easier to make than carrot cake. i'm losing my taste for apple dishes but if someone requested an apple dessert, i'd reach for this recipe again. (i also didnt have nutmeg fo i used a 1/2 tsp of all spice, and i put the apples in after mixing everything else by SPOON. very thick batter.)

Oatmeal Chip Cookies

super easy to make. come out perfectly every single time. i took the advice of a fellow reviewer and added a tspn of cinnamon and 1/2 tspn of cloves just to make them a touch more perfect for fall. i also prefer to ALWAYS use mini choc chips and i think they're perfect for this recipe especially.

Apple Crumble Pie

This was so easy to make! i added some allspice and cloves to the apples as well - LOVE those fall flavors. I also added some tapioca to the apples so it would not be a drippy soggy mess. i think next time i would use half brown sugar. It was definitely a hit though!

Oatmeal Raisin Cookies IV

THESE are AMAZING! I kept them in the oven for 2 extra minutes then promptly took them off the cookie sheet. So gloriously crispy on the outside with just a perfect tad of chewy in the middle. NEW STAPLE O&R recipe for sure. I also used rum soaked raisins for fun :) I dont think it altered the taste at all tho.

leave out the walnuts, unnecessary. split the sugar into half white, half brown. follow the rest of the recipe exactly. NO FAIL - best cookies i've ever made.

Pumpkin Bread IV

this was so delicious! and so easy to make! i actually made the recipe for 12 bc i couldnt fathom needing 3 pans of bread, so wrong! i wish i had more pans to share bc no one is getting any of my loaf. i made some swaps just due to what i had on hand: used dark brown sugar instead, used butter instead of oil, used allspice instead of nutmeg, and threw in about half a cup of raisins. i dont know if i'll ever try this recipe to the T since the changes i happened to make this time resulted in such an amazing loaf.

Iced Pumpkin Cookies

love love love! super airy and moist. icing not necessary but a nice touch. i also sprinkled some more cinnamon on top of the icing, right before it cooled. delicious! whoever said it tasted like the top of a muffin had it spot on!

Apple Crisp II

super easy. i halved the water and mixed the apples with sugar before laying them in the pan. my mom devoured the entire pan within two days! didnt even need ice-cream but i could see how if it was available, it would be heaven in a bowl. besides the melted butter, the recipe isnt all that bad for you either!

Chocolate Cavity Maker Cake

i made this into cupcakes. AMAZING! totally didnt need frosting/icing but I was bringing them to work on a summer day, ergo, a dusting of confectioner's sugar was NOT going to cut it. Instead, I dipped strawberries in dark chocolate and placed one on top of each cupcake. VERY well received.

Basil Chicken over Angel Hair

okay so i made a lot of changes but i'm still going to review as i'm sure the original way is equally delicious. I omitted the hot pepper sauce and the cheese (didnt have either on hand). Also doubled the salt and tripled the garlic and made sure to use fresh basil. Came out SOOOOO good! I was worried that it wouldnt be saucy enough as I like my pasta drenched in sauce usually... but it was a perfect flavor balance. Thanks Wendy!

Brown Sugar Brownies

i doubled the recipe for a 13x9 inch pan. Left out all salt and walnuts, but added a standard size bag of nestle tollhouse semi sweet choc chips. I must say, it was delightful. VERY easy to make. I would definitely suggest overbeating the butter and brown sugar to make sure the flavors meld. I also kept it in for exactly 30 mins. Definitely glad i didnt go a second over that time because the edges were already a teeny tiny bit dry. Overall - winnnnerrrr, for ease and deliciousness. Tastes like maple syrup morsels!

Janet's Rich Banana Bread

had some bananas that were begging to be mashed and turned into some bread - so, in a half-hearted attempt to not waste produce - - i happened upon the best banana bread ever. literally, worth every bit of 5 stardom. i guess my bananas were a bit on the smaller side of medium so i used 2.5 - and mashed them up (best part!). i also used 1 jumbo, and 1 medium egg., and 3/4 cup chopped pecans instead of walnuts. the sour cream and butter really shine. super tender and sweet, almost like a coffee cake instead of a quick bread. i want to make this over and over again!
