Blueberry Buckle

so so good. it's 90 degrees here today and i would turn my oven on all over again for this recipe. i used store bought blueberries (pint box), and added a tspn of vanilla to the batter. didnt have too much trouble mixing it, or spreading it. I popped it in the oven before i started making the topping. for that, i used - 1/2 cup light brown sugar, 1/2 cup oats, 1/2 tspn cinnamon and 1/4 cup cold butter. this came out amazing. a scoop of vanilla ice cream would be a nice addition but def not necessary. i used a round 9 inch pan. and baked for an hour (i added the topping on about 15 mins into baking, so that baked for 45 mins).

Key Lime Cheesecake I

i halved the recipe bc i knew that it wouldnt fit in a pre-baked, 9inch pie pan otherwise. (was slightly below the edge of the pan) also, who knew key limes were so hard to squeeze???? i couldn't believe how little juice i was getting. so even though this was one of the only times i've 'zested' i found that easier so i put a bit more zest after giving up on the juice. cheesecake came out delish! the zest provided pretty little specks, much better than adding green food coloring. i kept it in the oven turned off for 30 mins, then let it cool on the stove for an hour before popping it in the fridge overnight. my past keylime cheesecake experiences have been with easier versions containing sweetened condensed milk. the quality is the same but the other recipe is easier so may just stick with that instead.

Chess Cake

i dont understand the rave reviews. i made the yellow cake "mix" from scratch... and followed the rest of the directions as written. (used 3.75 cups confectioner's sugar instead of 4... just because thats what 1 box equals) in any case, it was a pain to stir the base layer, and even worse to try and keep it down without it sticking to your hands. the top layer is way too eggy and there's not enough of it if its supposed to be like cheesecake. ugh, this was not what i was expecting at all and im far from pleasantly surprised. (35 mins at 350 seemed fine for mine tho - it looks the same as the 2 pics posted)

New York Cheesecake I

simple. delicious. the original. easy to personalize with fruit, chocolate, whatever your heart desires. but honestly, i prefer it just the way the recipe makes it. definitely going to be my holy grail cheesecake recipe.

Pecan Pie Bars I

these were just okay. definitely not what i was expecting. i've made pecan pie a couple times before without a problem, i assumed this would be a more portable version of that with more crust. ehhh... the crust wasnt even that great. i used white sugar, and it just seemed like there was waaaay to much flour in there. would prob use butter instead next time, and also light brown sugar. the topping barely resembled pecan pie. the corn syrup and sugar congealed into straightup caramel, and the pecans just rested on top, looking glazed. in order to salvage this creation i melted two ghirardelli milk chocolate + hazelnut bars and drizzled them over the top. the result: happy coworkers. but everyone said it tasted like those russel stover turtle chocolates.. with a crust. it wasnt terrible, but i wouldnt call it a pecan pie bar...

make sure to use dark rown sugar - light brown makes the result look pale and sickly. also, would recc'd a dash more m&ms. everyone that tried them, said they liked them but.. still.

MMMMM... Brownies

really easy to make. i prepared everything in one pot. these are actually a lot better the next day, just make sure you store them in an air-tight container. otherwise they'll go hard fast. handed them out to over 10 ppl, and everyone raved. :)

French Apple Pie with Cream Cheese Topping

Made this for easter, everyone raved about it! i let the topping stand by the warm oven so it was very easy to apply; i also put a ring of dried cranberries around the sides. Then we popped it in the fridge for it to set, after 5 hours it looked so gourmet. A lot of people compared it to carrot cake but with apples. and MUCH easier to make than carrot cake. i'm losing my taste for apple dishes but if someone requested an apple dessert, i'd reach for this recipe again. (i also didnt have nutmeg fo i used a 1/2 tsp of all spice, and i put the apples in after mixing everything else by SPOON. very thick batter.)

Orange Cranberry Drops

omg. i was making a batch for my boss and wanted to make sure they were PERFECT so i followed the recipe almost OCD exactly (actually sifted flour for the first time, used fresh-squeezed oj, and zested an orange on a grater?!) the one prob was i didnt have orange extract, so i just subbed a 1/4 tspn of pure vanilla extract and added an extra tblspn of orange juice. im not sure if the extra oj was to blame but the dough was pretty sticky.. so i popped it in the fridge for a bit to harden it up. baked for 12/13 mins... smelled amazing, burnt my mouth on the first bite. and i regret sampling them bc now i want to eat them all. also, maybe i made my cookies too big but there's no way i see more than 24 coming out of this amount of dough...

The Best Banana Bread

eh not the best at all. i added walnuts (can't imagine a banana bread without nuts!), cinnamon & cloves (really? no spices in this recipe???), and used 2 ripe bananas (didnt measure exactly but it looked like 1.5 cups..).... didnt think it was sweet enough. i like my quickbreads to be more like pastries not like health breads.

these should just be called biscotti. especially if you follow the recipe exactly and put them back in the oven to brown on both sides. next time, i'll only pop them back in to toast one side. also, would be nice if these had some sort of icing on the top. they're very plain. or rather the anise flavor is very delicate, which is nice for a mature pallet but not that exciting. overall, would prob make this again bc i have a lot of anise extract, and no other recipes that call for it are this easy.

Pumpkin Bread IV

this was so delicious! and so easy to make! i actually made the recipe for 12 bc i couldnt fathom needing 3 pans of bread, so wrong! i wish i had more pans to share bc no one is getting any of my loaf. i made some swaps just due to what i had on hand: used dark brown sugar instead, used butter instead of oil, used allspice instead of nutmeg, and threw in about half a cup of raisins. i dont know if i'll ever try this recipe to the T since the changes i happened to make this time resulted in such an amazing loaf.

Pumpkin Cheesecake

i made this without the sour cream topping so maybe that's why i didn't LOVE it.. but, yeah.. pretty plain. could've used more sugar actually. unless you were going for a very "healthy taste". i added a teaspoon of vanilla to the filling bc thats how i usually like my pumpkin cheesecakes. the texture was very light and airy and almost dissolved the second you put it in your mouth.

Coconut Cake IV

just made this for my birthday. sorely disappointed. the only thing i did diff is subbed vanilla for coconut extract and used coconut milk instead of buttermilk - figured it would equal the same consistency and coconut flavor. but those changes didnt even matter, bc with 5 eggs.. thats all you could taste anyway. maybe it's bc i lean towards vegan and really only like eggs for their binding properties, but this was ridiculous eggy. and yes it is moist but thats only bc its so dense! (not in a good way) i pretty much had to shovel it out of the pan.
