Raspberry Lemon Muffins

These were okay. I definitely wouldn't say they're "5 star" muffins, and lemon/raspberry is actually one of my favorite flavor combos so im already being pretty lenient. My raspberries also leaked their color a bit so i had light pink muffin tops and a swirl of white/pink inside. I guess just make sure to not take those out of teh freezer until the second you're dropping them into the batter?

Baked Kale Chips

Super easy to make and really good! I love kale to begin with but this is a totally new way to enjoy it. I didnt have "seasoned salt" so i just used sea salt and a little bit of chili powder, garlic powder, and of course - parmesan! I will definitely be making these again, and playing with more spices. I think there's a recipe for salt/vinegar kale chips - - which sounds amazing!

Outrageous Chocolate Chip Cookies

super easy to make! turned out really delicious. the only substitution i made is using 1 tbspn ground flax seed + 3 tbspns water instead of the egg (no reason besides being out of eggs at the moment.) i kept the first batch in for 10 mins, took them out since the edges on some were already brown. second batch i kept in for twelve minutes. I'd advise to go with the 10 min mark as they do continue baking on the hot sheet once you take them out and they're definitely better when they're a bit chewy in the center.

very solid recipe. no way you can go wrong. but along those lines, also nothing that special. next time i'll use this as the base and add a topping or something to spice it up.

Flourless Chocolate Cake II

this was good in terms of super simple and totally squashed my out-of-nowhere-super-intense need for chocolate. 30 mins at 300 degs cant possible be the correct temp&time.. im kind of surprised only a few other reviews mentioned that. maybe my oven,thermometer,and timer all malfunctioned?? in any case, i kept this in for 30 mins at 300, and it was completely raw in the middle, kept it in for another 15 at 325. it was still a bit underdone at that point, but i just wanted my fix so i took it out. i just made this but it seems like it will hold in taste for at least a week. Might even freeze a bit for when the next craving hits!

Pumpkin Flax Quickbread

not terrible. definitely tastes healthy/fibrous. i threw in some raisins - definitely a good call. you need at least raisins or walnuts in there, otherwise - you will just be very sad eating this. :(

Iced Pumpkin Cookies

love love love! super airy and moist. icing not necessary but a nice touch. i also sprinkled some more cinnamon on top of the icing, right before it cooled. delicious! whoever said it tasted like the top of a muffin had it spot on!

leave out the walnuts, unnecessary. split the sugar into half white, half brown. follow the rest of the recipe exactly. NO FAIL - best cookies i've ever made.

Oatmeal Raisin Cookies IV

THESE are AMAZING! I kept them in the oven for 2 extra minutes then promptly took them off the cookie sheet. So gloriously crispy on the outside with just a perfect tad of chewy in the middle. NEW STAPLE O&R recipe for sure. I also used rum soaked raisins for fun :) I dont think it altered the taste at all tho.

Maple Shortbread Cookies

followed the recipe exactly. perhaps that was the downfall. ended up with boring pancake cookies and the incredibly subtle maple flavor completely disappeared once the cookies were cooled. :(

Apple Crumble Pie

This was so easy to make! i added some allspice and cloves to the apples as well - LOVE those fall flavors. I also added some tapioca to the apples so it would not be a drippy soggy mess. i think next time i would use half brown sugar. It was definitely a hit though!

Mexican Cream Cheese Rollups

this was pretty good, and i dont even like olives. made it for my sister's birthday and everyone said they were great but didn't really grab them up. :/ the salsa for dipping is a necessity. and make sure you get the 10" flour tortillas, theyre better quality than the smaller ones for whatever reason (talking about Goya brand)

super easy to make. come out perfectly every single time. i took the advice of a fellow reviewer and added a tspn of cinnamon and 1/2 tspn of cloves just to make them a touch more perfect for fall. i also prefer to ALWAYS use mini choc chips and i think they're perfect for this recipe especially.

Butterscotch Apple Cookies

i read over the reviews first... made the mistake of listening to the ones that said to cut down the butter scotch chips. definitely would have preferred both cups. also, omitted the juice as the 3 small/medium apples i grated were relatively juicy. overall, if these were crunchy - it would have been a 5 star recipe. instead it just tasted like individual piece of apple cake. good flavor though. simple enough. if you're looking to bake some cookies and dont want to do easy choc chip or snickerdoodle or oatmeal raisin.. this is a nice one to throw into the rotation.

Sam's Famous Carrot Cake

my roomates and my mom loved this. personally i didnt enjoy the addition of pineapple. made the cake moist but almost too moist. felt like i was eating it almost raw even though i kept it in over the 1 hr suggested time. the taste was great tho.. so .. eh. guess im just setting my hopes too high.

Pierogi Casserole

used fake bacon, it was delicious. how can it not be? cheese, potatoes, butter.... i also used oven ready lasagna noodles.. i think i'll go for the real thing next time because the top lyer of noodles (esp around the edges) was rock hard. i kept it covered with foil in the oven up until the last 10 mins, but yeah.. still hard. it was annoying to cut.

Carrot Cake XI

this was definitely a super good recipe. but i totally messed mine up. make sure you keep an eye on it if you're making mini cupcakes - they'll obv be done waaay faster. also, someone said to double the cinnamon,... which i did bc i love cinnamon, but it just became a spice cake at that point. still good but why did i grate so many carrots if i didnt taste them? also, 1 bag of carrots was enough for 4 cups, unpacked cups.

Double Chocolate Chunk Cookies

these tasted like those pepperidge farm sausalito cookies. they didnt do much for me. i even used ghirardelli chunks (the chunks were awesome when they first came out of the oven.. like little melty chocolate surprises with each bite). a lot of reviewers mentioned these stayed soft even the next day, that's cool - but in this case, i think these would taste better crisp. over all, not bad but def not repeating this recipe without some changes. (also, my cookies were on the flat side. hypothetical next time, i'll prob throw the dough in the fridge)
