Picante Chicken Rice Burritos

Very yummy! My only complaint was that the burritos were a little dry, as others said. We put salsa and sour cream, as well as some shredded lettuce on top and that helped with the dryness. In the future I may cover them with enchilada sauce before baking. We also didn't use the olives and used green chiles instead...and used salsa instead of picante sauce. A keeper =)

Oreo® Cookie Cake

Very yummy! I first had this at a BBQ one summer and have been looking for a recipe since. I use chocolate pudding instead of vanilla and it isn't too rich. My only word of caution is that because you need to make and refrigerate each layer separately, it can take a while to make. I wasn't prepared the first time I made it! Definitely a keeper =)

Green Bean Casserole II

I wasn't impressed with this recipe. I thought it was much to bland and the green beans turned out crunchy. I should have taken the advice of other reviewers to thaw the green beans first or used canned green beans instead. Next time I'll also add a little salt and maybe less milk so the cream of mushroom soup doesn't lose its flavor so much.

Judy's Strawberry Pretzel Salad

I just made this today for Thanksgiving and it was WONDERFUL!! I didn't make any variations, and it turned out great. I was worried the crust may be too hard making it the same day as some of the other reviews said, but my crust turned out perfectly and wasn't too hard at all. This recipe basically tasted like cheesecake with strawberries on top, but with a pretzel crust instead of graham cracker. I may try making it with raspberries next time just for something different. Definitley a keeper!!

Peanut Butter Cup Cookies

These are delicious...we look forward to Christmas every year just to have them again :) Like others have shared, it's best to put the pans in the freezer/refrigerator after putting the peanut butter cup in the cookie to help the cup keep its shape. I've also learned you can use the sugar-free peanut butter cups and not tell the difference (I tried these just to avoid having to remove all the wrappers...the sugar-free cups aren't wrapped!).

Buffalo Chicken Dip

This dip is fabulous! My husband and I love it and often bring it to friend's homes for football Sundays :) I always receive many compliments. We make ours on the stovetop, then pour it in a baking dish and bake it for about 10 minutes at 350 just to melt the cheese on top...we also use buffalo wing sauce instead of the pepper sauce. I highly recommend this recipe!

Downeast Maine Pumpkin Bread

This was my first experience making pumpkin bread and I chose this recipe because of the great reviews...I wasn't disappointed!! The only variation I made was I used 1/2c of oil and 1/2c applesauce (instead of 1c oil), and I made mini-muffins instead of a loaf...they were SPECTACULAR!!! The recipe made about 86 mini muffins (I only cooked them for 18-20 minutes). I already plan to make more tomorrow...my husband is bringing the ones I made today into work :)
