Easy Chicken Curry

my 13yr old daughter cooked this for me tonight and it was surprisingly good with recipe followed exactly as described. She ate it over rice, I ate it on some baked potatoes that I needed to get eaten. Great easy recipe.

Creamy Fish Chowder

Did recipe as written except removed the condensed milk, it was fantastic without, and used some frozen shredded potatoes (only had one whole potato). Used leftover white fish of sorts, and made for a great meal out of something I hate eating (leftover fish...yuk). Everyone (1 yr old, 2 yr old, 13 yr. old, 35 yr olds) liked it. No where in this recipe was there sweetness to it....joshcoctions used sweetened condensed milk...bet you never do that again.

Baked Spaghetti Squash with Beef and Veggies

Loved the idea....tasted good. Used what I had on hand to make it. SO ommitted the green peppers and used mushrooms and black olives. After eating it, my husband and I agreed this version would have done better (still delicious) if stuffed into a green pepper than baked.

Hopi Corn Stew

awesome...1/2 the recipe....didnt have any broth so I didnt drain the fat off the 90/10 ground beef to compensate, added 1 tbsp cumin, minced some garlic....all added to what was called for in the recipe. made enough for a family of 5 w/ leftovers. will add to the circulation of supper menus.

Italian Sausage Frittata

Loved it, will make again...made w/ fresh broccoli and onions w/ chicken sausage and habanero cheese. I loved it but a little too spicy for the toddler. Husband loved it but gave him indigestion in the middle of the night.

Easy Chicken Breast

Easy Peasy to make....Picky eating middle schooler ate it all w/ 2nds... lightly seasoned the chickn before adding sauce.... SUGGEST placing on a dish on a cookie sheet tray because it tends to boil over. I have to clean out the oven now because i didnt do this....

Slow Cooker Chicken Taco Soup

DELICIOUS...EASY...and HARD TO MESS UP...for example, today I didn't have black beans, I used garbonzo instead....still came out AWESOME. I love a dash of lime juice in the end...totally makes the soup. Last week I had fresh cilantro....DELICIOUS....(cilantro turned rotten this week so did without) and still delicious. I always use one can diced tomatoes w/ chili's vs. 2 just because the kids freak out about the spice. Still spicy but not as bad. We're broke this week and I'm still trying to avoid unnecessary/cheaper carbs (ie bread/pasta) so this recipe works great for rough times and good times. Never used beer, but when it's in the house I'll use it if it's readily available. Sometimes I only have 2.5hrs on HIGH. Sometimes all day....still comes out AWESOME.

Balsamic Pear, Chicken, and Asparagus

Fight back the urge to add more juice or sugar...any more will make it too sweet. My husband was nice enough to choke it down after he added a bunch of sriracha to cancel out some of the sweetness.

Roasted Cauliflower and Leek Soup

Awesome soup....made it 2 months ago and because I haven't had cauliflower in the house i haven't made it again. Added 1/2 lb cooked bacon cut into 1" bites, and a couple potatoes cubed....Everyone loved it. The cauliflower was eaten up by our pickiest of eaters in the neighborhood...my 12 yr old daughter.

Grandpa Hubbard's Oatmeal

Remember to SOAK OATS OVERNIGHT. Not only does it make it digestible, they make them taste better/creamier too. Quick Oats have already been soaked overnight.
