Pineapple Pretzel Salad

Very, very good. I took this to the office potluck and it was a hit. I used lowfat cream cheese and whipped topping, used 1 1/2 sticks of butter and used the Splenda/Sugar for Baking. I drained one of the cans of pineapple and used the entire box of pudding. Delicious!

Lower Fat Banana Bread I

I thought this recipes was great! I made a few changes based on other feedback: I used 1/3 c. of the Splenda/sugar for baking, 2T butter and 2T applesauce, 1/2c egg beaters, 3 medium sized bananas, and 1c reg. flour and 2/3c whole wheat. I bought an 8-wedge cornbread cast iron skillet at Cracker Barrell baked at 350deg. for 42 minutes - each wedge equals 3 WW points - NOT BAD!!!!

Pesto Lasagna

This recipe was really good, although I did make a couple of changes: I only used an 8oz package of spinach, and a grand total of 9 lasagna noodles, three on each layer. My dinner guests really enjoyed the dish.

Red Bean Salad with Feta and Peppers

Man was this good!!! I took other reviewer's advice and used a basil and tomoto feta cheese as well as ground pepper. What a yummy dish!

Chicken, Stuffing and Green Bean Casserole

Oatmeal and Wheat Flour Blueberry Pancakes

These were awesome! Based on other suggestions I used 1 cup of blueberries, substituted applesauce for the oil, added cinnamon and vanilla (1/4 tsp each),used lowfat buttermilk instead of soy milk and added 1/4 of pecans. So, so good!!
