Chicken Marsala

I made this recipe last night and followed the directions EXACTLY! it was SOOOOOOOO good. My very picky 2 yr gobbled it up. I will definitely make this again. As a side note, use fresh mushrooms and not the canned kind :)

Gourmet Mushroom Risotto

I really liked this recipe and it turned out pretty good considering it was my first attempt. It should be noted, however that the cook time was WAY over 15 or 20 mins. I plan my dinners so they are ready about 20 minutes before my boyfriend leaves for work, and I just happened to start this super early (almost one hour) and I still had to rush. Overall, we were pleased with the outcome.

Hamburger Potato Casserole

Super easy, super good! My boyfriend said, "this is my new favorite". Would be really good with frozen peas or mixed veggies. I am for sure adding this to our weekly rotation.

Strawberry Rhubarb Custard Pie

I followd the recipe exactly, but I must have done something wrong (which seems to happen when I bake). The rhubarb was crunchy. Sorry Chef John, I'm not a very good student!

Baked Stuffed Winter Squash

In one word, this was "interesting". I don't think that it was bad, but I didnt' end up eating much. My boyfriend said that he like it, but he is super polite about my cooking! I do not think that we will be making it again. Fun to try new things though.

Jill's Hash Brown Casserole

I thought the onion in this recipe was just too much. If I make this again, I will probably just use onion powder. The corn flakes also didn't seem to "mesh" well with the whole thing. Overall, not my favorite. But, super easy to make..boyfriend seemed to like it.

Rempel Family Meatloaf

Wonderful meatloaf!! I followed the directions exactly and had a perfectly moist and tasty meatloaf on hand. I will note that I had to cook it for about an hour and 45 minutes in order for the internal temp to reach 165. Also, I put 2 slices of bread on the bottom of the pan to soak up the grease, and made a glaze of ketchup, brown sugar, and mustard to coat the top. I put half of the glaze on when it went into the oven and the rest halfway through. Overall, a VERY good meatloaf!

Slow Cooker Barbequed Beef Ribs

This was super easy and super good! The only change I would make for next time would be to NOT add the water, because it really thins out the sauce. I took the advice of other reviewers and seared the meat for a few minutes before adding them to the slow cooker. Also, I would trim the fat beforehand, because it was messy to try and do it afterwards. Yummy, thanks for the recipe!

Apple Crisp II

Very good and very easy to make! As per other reviewers, I did not add the water and cut the butter in rather than melting it. Also, as other reviewers mentioned, don't mix in the crumble with the apples...it will become soggy.

Fabulous Wet Burritos

These were actually pretty good. They do NOT taste like anything traditional or even Tex-mex, but more like a chilli cheese burger. The only change I made was to line them, seam side down, in a greased baking sheet and pour all the sauce over them, then sprinkle with cheese and bake at 325 for about 15 minutes. Microwaving them one by one is just silly. Also, I skipped the tomato soup. Overall, we enjoyed it!

Country Fried Squash

I made a few changes to this recipe, and I think it really spiced it up! First, I didn't have any plain cornmeal so I used Jiffy cornbread mix. Secondly, I took the advice of another reviewer and used Lawry Seasoning Salt..a lot of it. Finally, I added cayenne pepper. Keep the heat over medium-low or else the oil will begin to burn after frying several batches. Serve with ketchup or even barbeque sauce, yum!
