I was a bit scared of this, because although I had heard it was great and was very curious, it just seemed odd. Slimey cabbage mucking up mashed potatoes? However, I had nothing to fear, it was delicious. I used red cabbage as I had it on hand, and wow! The colors were crazy the night I made it, leftover seemed to intensify! (I'll try and post a photo.) Anyway, it's a flexible recipe, and I'm sure I'll be using it again and again.

The cookie part of this is terrific! I wanted to use up some jam (not a fan of it on toast), so I made these. They were really easy and quick, although I need to work on presentation. I'll make them again.

Scalloped Cabbage

I really enjoyed this. I was afraid of it being bland, but I didn't have that problem at all. I attempted to temper the eggs a bit, before mixing them in and also didn't have the scrambled egg problem. My only change next time is to try and make it a bit healthier--nonfat milk, less butter, and maybe using breadcrumbs instead of crackers.

Cajun Style Baked Sweet Potato

This is a fun little dish. It had plenty of kick, but that was probably because my paprika had some kick to it as well as the cayenne. The only changes I made were using real onions and garlic, because I didn't have any powder. Still great.

Summer Squash Casserole

So...a couple changes: First, I only used one and a half onions, no butter, and mixed half a cup of extra sharp cheddar into the soup mixture. Also used low fat soup and sour cream, and fat free croutons. Topped it with hazelnut meal, since that's what I had. Given this, the recipe is tasty. It's a little odd looking and tastes very comforting, nothing fancy enough for guests, but I would make it again--which is always the ultimate test.

Fettuccini with Basil and Brie

At the last moment, I realized I didn't have any fresh basil! Otherwise, I followed the recipe. I love fresh tomatoes, and those made the recipe. However, it hit my tastes, but was otherwise average. I might make it again for me, but probably not company (the ultimate test).

Escarole Siciliano

Disclaimer: I'm not a fan of escarole! But my CSA keeps sending it to me, so I keep searching for uses. I think this is my favorite so far, as I'll finish it without groaning inside. The recipe is fine. I made no changes to the recipe, although I'd wanted to add garlic, and think it would work well with the dish.
