Baked Eggplant with Cashews

I was skeptical, because 1/2 an hour in the oven didnt seem like enough time to cook everything, but it sounded good, and the other reviewers convinced me. It wasn't enough! After an hour (hour and a half?), we gave up. The bottom layer was soft, and cooked, the top was hard and raw...along with all the onions. If you attempt this, be sure to cook everything thoroughly, then put it in the oven to heat through. But I'm not sure it's worth the effort.

Vegetable Lo Mein

Loved it, though I cut the honey in half, next time I'd omit it altogether. I'd also increase the cayenne, but that's just me.

A good base... As others suggested, I'd double the veggies. I also couldn't fit it all in my baking dish, so I'll tweak the sauce/cheese amounts next time.

Mom's Zucchini Bread

I didn't care for this at all! It tasted like a nice, moist, and way too sweet cake. There wasn't enought zucchini to make it taste significantly like zucchini bread.

Summer Squash Casserole

So...a couple changes: First, I only used one and a half onions, no butter, and mixed half a cup of extra sharp cheddar into the soup mixture. Also used low fat soup and sour cream, and fat free croutons. Topped it with hazelnut meal, since that's what I had. Given this, the recipe is tasty. It's a little odd looking and tastes very comforting, nothing fancy enough for guests, but I would make it again--which is always the ultimate test.

Barbecue Tofu Sandwiches

It's not bad--a great way to cook tofu, but I might try marinating it in the sauce for a few hours, first. Otherwise, the sauce was just overpowering...

Fettuccini with Basil and Brie

At the last moment, I realized I didn't have any fresh basil! Otherwise, I followed the recipe. I love fresh tomatoes, and those made the recipe. However, it hit my tastes, but was otherwise average. I might make it again for me, but probably not company (the ultimate test).

Greek Pasta Salad with Roasted Vegetables and Feta

I just wasn't impressed. It did inspire me to try some new combos--I kept thinking things like, "parmesan, not feta. Add some mushrooms, roast the garlic, lots more greens, olives!" But it just screamed out for so many changes. I didn't find a cohesive taste, the veggies were soggy the next day, and the feta just seemed terribly misplaced.

Black Bean Enchiladas

Good as it is, but I'll be customizing it next time...mixing the sour cream into the filling, instead of on the side, using 3/4 or 1/2 the onion, adding a couple chili peppers, and maybe some extra cheese...

Baba Ghanoush

Hmmm...after a day in the fridge, mine turned the most unappetizing deep grey color! Otherwise, it's good...different, but it'd make a great sandwich filling...not as crazy about it as a dip, as I'm used to, but not a total loss...it's similar to all other recipes I have, so it's probably just me!

Eggplant Tomato Bake

Take my rating with a grain of salt--it's how I imagine the original recipe. In my version, I used canned tomatoes with sauce (it's winter!), real parmesan cheese, and real mozarella. It is easy--simple, even. However, it was nothing special. Coat those eggplants in breadcrumbs for some eggplant parmesan, and you'll enjoy it more. Even without the egg (and added fat). Nonetheless, it is an easy way to get a couple servings of vegetables and a dose of calcium, although if you're doing it for purely health reasons (not to lose weight), you're best with skim cheese, not nonfat--you'll absorb more vitamins that way.

Cajun Style Baked Sweet Potato

This is a fun little dish. It had plenty of kick, but that was probably because my paprika had some kick to it as well as the cayenne. The only changes I made were using real onions and garlic, because I didn't have any powder. Still great.

Balsamic Glazed Carrots

Per reviews, I steamed the carrots, first. I meant to just steam them 'al dente' (is that possible with carrots?) but cooked them completely. So, I just gave them a minute in the olive oil, before adding the other ingredients. Still, I liked them. They were different, in a good way. I'll be making them again.

Messy Taco Salad

Good, although I only used about half the dressing, and thought it was too much. I used 3/4 the cheese, and half the chips, as well, and thought they were fine. However, I didn't use meat. Next time, I'll probably try it with the Catalina dressing, or find out what my mom uses.
