Chorizo Stuffed Bell Peppers

Used yellow bell peppers cause I like them better and skipped the tomato soup....they were sooo good! totally making this again.

Pumpkin Muffins with Streusel Topping

They were definitely soft and kind of fluffy...doubled the streusel b/c, like other reviewers said it makes quite a few more muffins than it says. Also, might add cinnamon next time.

Apple Pie by Grandma Ople

So delicious!! I added vanilla and cinnamon...the inside of the pie was just slightly too liquidy - might try to make slightly less of the sugar mixture next time. Also poured over top the apples and then put a full crust on - didn't do the lattice crust.

Dad's Leftover Turkey Pot Pie

I will definitely make this again! I used chicken instead of turkey cause that's what we had...also used fresh carrots instead of frozen and added minced garlic to the onions. I only had one store bought crust so I didn't have a crust on top, just folded the edges up....worked out fine! thought it was tasty.

Slow Cooker Chicken Taco Soup

I cooked the chicken and shredded it before adding it to the crockpot which worked better for me since i only had 3-4 hours to let it cook in the crockpot. Also added red pepper flakes cause we like things hot and subbed chicken stock for the beer since we don't drink. Overall, pretty good soup.

Eggplant Parmesan II

This recipe was ok - nothing exceptional (but I think I've just decided I'm not a big eggplant parm person anyway). I did not do all the extra steps with salting the eggplant and it was FINE. I also used a mandolin to cut the eggplant so it was thin enough I didn't need to cook it longer than called for in the recipe.

Szechwan Shrimp

Super delicious! So quick and easy to make. I doubled the sauce recipe. Cooked carrots, sugar snap peas and red bell pepper in the pan for a few minutes then added sauce and shrimp and cooked it down for maybe 5 min longer. Served it with brown rice. Will be for sure making this one again!

Sour Cream Chocolate Frosting

This recipe was perfect as is. Used a double broiler to melt the chocolate and butter then mixed everything together in the kitchen aid - so smooth and delicious.

Super-Simple, Super-Spicy Mongolian Beef

My hubby and I loved this! I didn't change the recipe at all. Used the full 1tbspn of red pepper flakes and it was fine for us but we like spicy food. Also sprung for flank steak which was totally worth the extra few bucks. Sauteed carrots, celery and red bell pepper in the same pan then took it out and sauteed the beef with the extra marinating juices (marinated meat for 2-3hours which was sufficient). Served over white rice. Sooo good! Will definitely be making this again.

Fish Tacos

The tacos were really good. The white sauce especially - I added some of the seeds with the jalapeno too for a kick. Maybe I did something wrong but the batter was a little too thick for my liking(I did substitute Sprite for beer but I don't think that was the problem. I think it's just the recipe).

Slow Cooker Guisado Verde

My husband loved this. He claimed we should open our own mexican restaurant. haha. I used fresh tomatillos b/c i couldn't find canned. I cooked it between 4 and 5 hours on low and it was perfect.

Classic Peanut Butter Cookies

So good! Melted in my mouth practically. Added slightly more peanut butter and sugar. Did 1/2 tsp vanilla and 1/2 c butter, 1/2 c shortening. Baked at 350 10 min.
