Mini Meatloaves

Best meatloaf ever -- and so easy to make! I used shredded Monterey Jack cheese instead of cheddar, and the results were delicious. My husband and I loved it with the sauce, and our kids loved it without the sauce.

Easy Quiche

Wonderful recipe that can be customized many ways! I tried making it with sliced fresh mushrooms (sauteed in butter for 5 minutes before I added them) in the place of the veggies and shredded Monterey Jack cheese in the place of the cheese, and it turned out great -- I'll try it with another veggie/cheese combo next time. Great served warm for dinner, and the leftovers are delicious cold for lunch the next day.

Turkey Enchiladas

Yummy, classic enchiladas! I followed the suggestion of other reviewers and used twice the amount of enchilada sauce called for. I didn't think this recipe needed extra spice -- I liked the mild flavor of the dish, it's comfort food at its best.

Banana Cranberry Bread

The flavors of cranberry and banana didn't work together as well as I expected -- it felt strange to be eating sweet banana bread and suddenly hit a pocket of tart cranberry. I didn't include the walnuts -- maybe the flavors work better together when nuts are included too.

Mushroom Sauce Baked Pork Chops

Delicious tender pork, creamy flavorful potatoes -- this recipe is a real keeper! The directions "until potatoes are tender" are important -- my potatoes weren't done at 60 minutes of baking, but they turned out perfectly with 20 more minutes in the oven.

Pumpkin Muffins II

These are the best pumpkin muffins I've ever made! They're moist, rich and flavorful, with none of the blandness that some pumpkin muffins have. I used canned pumpkin instead of fresh, and I cut the nutmeg to 1 tsp. and the allspice to 1/2 tsp. -- the rest of the spices I used in their original quantities. This made 24 regular-sized muffins.

Tomato Macaroni Soup

Sorry to say, we didn't like this very much -- the acidity of the tomatoes clashed with the milk, the ingredients didn't seem to "marry" very well. If I made it again I might add some sugar to cut the tomatoes' acidity.
