Zucchini Brownies

WOW!!! Make these! Everyone loved them! I made them GF using a cake blend I make. Next time I will grate the zucchini finer. I did not make the frosting but instead a chocolate glaze that I pour over my Texas Sheet Cake. I will be making these again! The batter looks very unusual and I was a little hesitant about the fact there are no eggs but they were super moist and totally brownie like. LOVED them. Thank you for sharing.

Amazing Gluten-Free Layer Bars

AMAZING!!! Like rich candy bars. SUPER easy!!! I omitted the peanuts and butterscotch and used walnuts. This recipe is the best to curb a sugar crave. Thank you for it!!

Persimmon Bread I

This is my favorite way to eat persimmons! I doubled it and baked it in two 8in. round pans. I did modify it though to make it gluten free: I used (for a doubled recipe) 1 1/4 c. millet flour, 1 1/4 c. rice flour, 1/2 c. tapioca starch, plus, 1 1/4 tsp. xanthan gum, and only 1 c. sugar instead of 1 1/2 c. I always use less sugar in my baking and things turn out fine. I will make this again and would like to try layering the cakes with cream cheese frosting. Thanks for the good recipe!

Chocolate Cornstarch Pudding

Just made this tonight. It came together quick and I let it cook up slow. Be patient...it takes about 10 minutes to thicken. I used brown sugar instead of white and used a tish less cornstarch. It was sooo yummy. I can't wait to make this again!

Banana Sour Cream Bread

Yummy and it turned out perfectly. The only reason I gave four stars is because it is heavy on the fat....I have another banana bread recipe that is just as moist and tasty but healthier. This one I will make on occasion though ; )
