Banana Muffins II

I added 3 tbsp. of chia seeds to the mix as well as 1 tbsp. of olive oil. The texture was good, I thought it could have been a little sweeter. The kids and the hubby liked them, so we'll do them again.

Absolute Mexican Cornbread

This was some great tasting bread. The edges where perfectly crunchy-crispy and the center was moist and flavorful. I did not include the peppers due to the company I was cooking for, but I think they would have made it that much better. I paired it with a pulled pork and it certainly made the dish. My only complaint is the amount of butter. I followed the directions even though my gut said this was too much. Well... it was too much. I'll try 3/4 cup next time and see if that helps with the greasiness.

Easy Morning Glory Muffins

My family loved these tasty muffins. I subbed pumpkin for the oil. The carrots and cocnut gave a great texture. I'll add another apple next time because it got lost in everything else. The pumpkin modification gave exta fiber and healthiness. However, easy these were not. It took a while to get everything together. It looses a star for false title.

Peanut Butter Chili

Almost not edible. My little kids ate it so I'm giving it two stars, but I couldn't seem to do anything to make this edible for hubby and I. Strange dish.

Almond-Topped Fish

Great tasting dish. I added and extra tablespoon of lemon juice and I put the whole thing under the broiler for a few minutes to get some better color out of it. All my fish eaters were fans, but it still retained enough fish taste to turn off my non fisher lovers.

Roasted Brussels Sprouts

Not bad. We enjoyed them, but not as much as some other recipes we've tried from this site. I found them a wee bit salty, but overall the flavor was good. We are brussel sprout fans.

German Potato Pancakes

Great! I did a half batch. I pressed the potatoes dry and they came out excellent. Very tasty and versatile. Breakfast lunch or dinner, they'll make a great side dish.

Spinach Balls

I make this recipe all the time. Today I used the mix to stuff mini pumpkins. Baked at 375 for 45 minutes. It turned out great and looked amazing. I added the picture.

Modenese Pork Chops

We found this just a little bland, but the chops were perfectly cooked. I think I'll tinker a little more next time. Needs to be a bit more savory for my taste.

Caramelized Brussels Sprouts with Pistachios

Very good recipe. 3 out of 4 family members ate them well. (4 yr old was not swayed by the pistachios.) This was Hubby's first time eating brussel sprouts and he had seconds.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This was okay after adding a little salt. I was really disappointed. The sauce was very thick. I didn't add a little extra milk as one reviewer suggested. Maybe that would have helped with the thickness. Something all together different was needed to combat how bland this was. Hubby said it might make an okay side dish to something more flavorful.

Italian Dressing Mix

I have never made my own dressing, but tonight I found my bottle of dressing gone and a pasta salad completely prepped. This was easy and I had all ingredients on hand. I added a dash of cayenne and a dash of red pepper flakes for a little kick. WOW! I feel like a kitchen goddess!!!

Corn and Black Bean Salad

This was very good. It got lots of compliments from some distinguished pallets. I added some thinly sliced onion and red pepper and it helped to perk the dish up a bit. Overall a great simple dish for summer.

Ham with Cherry Sauce

We made this Cherry Sauce today and it was a hit. I am not a fan of raisins and was trying to get away from the raisin sauce. This was a huge improvement and everyone was happy. It was like a little bit of dessert in the main course.
