Venison Chili

Great chili! I used 1 lb ground venison and 1 lb pork sausage, 2 small white onions bc i didn't have a red one, 1 1/2 cups of wine, dried cilantro because the store was out of fresh, 1/4 tsp cayenne and 2 heaping tsp chili powder, and I added a can of pinto and a can of kidney beans because we like beans :) better than other venison chili recipes I have tried!

Chicken Breasts with Balsamic Vinegar and Garlic

This was SO GOOD! I pounded the chicken first with a meat mallet, and did everything else the way the recipe says. I'll definitely make this again!

Buffalo Style Chicken Pizza

This was GREAT!! I threw the chicken in the crock pot for a few hours and shredded it because it's so easy and comes out perfect, plus the shredded chicken really hangs onto the hot sauce. I used Louisiana hot sauce because that's what we had, but i didn't measure it, I just added as much as I thought the kids could handle and then more for my husband's side of the pizza. I used Marie's blue cheese because it's awesome, and I used a whole 16oz brick of mozzarella cheese and grated it. This was just as good as any restaurant's buffalo chicken wing pizza!

Easy Cinnamon Fudge

This was so fast and easy and it had that perfect "melt-in-your-mouth" consistency I was looking for... Good thing I doubled the recipe. I plan on eating 2/3 of it myself ;)

Pan-Fried Asparagus

Great flavor! I think I prefer broiled or grilled asparagus, but those weren't an option for me this time as my oven was occupied and the grill looks like a snow drift... I added some lemon pepper and a little red wine vinegar at the end too. :)

New Year Spinach Fettuccine with Scallops

This turned out ok.. Too fishy for me but maybe if I use steak next time instead of scallops then it might turn out better. Maybe I'll try it.

Delicious Black Bean Burritos

This was great- everyone loved it. I made a few small changes: I spread some refried beans on the tortilla before putting the cream cheese/bean mixture on, I then sprinkled some Mexican blend cheese on and rolled them up, then I stuck the burritos on a George Foreman grill for a minute or two.

Best Steak Marinade in Existence

I used this on venison after pounding the heck out of it. It stayed in the marinade overnight then I cooked it in the crock pot. It had no gamey taste whatsoever and it just fell apart!

Unbeatable Pecan Pie

I must admit, I was skeptical while this pie was cooking, because it seemed like it was puffing up like a cake would, instead of setting like a normal pecan pie... But then I tasted it. It isn't spongy like a cake, but the top is perfect with a delightful crispiness and the inside is the most moist (but not soggy), delicious, perfect pie I've ever tasted. Pecan pie is my husband's favorite, so I made it as a reward for making it to Phase 3 of the Maker's Diet, and I made the following substitutions: -I used a sourdough crust with the recipe found here: http://www.freshhealthycooking.com/Sourdough_crust.html -1/4 cup stevia instead of 1/2 cup sugar -I used the amount of butter in the directions (2 TBSP)for the pecans instead of the amount in the ingredients list (2tsp)

Pizza Casserole

I'm always skeptical of pizza-flavored pasta, but this was the best one. Everyone loved it, and it was easy! I deviated slightly from the recipe: I used some leftover ground venison that had taco seasoning in it, I used a whole jar of marinara sauce, pre-sliced pepperoni (easy) and I grated some cheddar cheese in addition to the mozzarella. Yum!

Awesome Slow Cooker Pot Roast

I know it really bothers some people when someone rates a recipe that they have changed, but to me, if I want to see what a recipe is rated, I just look at the overall star rating. I look at the individual reviews to find out what other people did to make a recipe even better. Having said that... I took some advice from a few people who posted very good advice: I used one can of cream of mushroom and one can of cream of chicken, beef broth instead of water, a little wine, some celery, potatoes, carrots, celtic sea salt, black pepper. Cooked on high for a couple of hours then down to low for the rest of the day. This was by far the best pot roast I've ever tasted, and my husband raved about it. Can't wait to make this again during these chilly days!
