Mandarin Chicken Skillet

Very good and very easy. Doubled broccoli & mushrooms, used 1 1/2 lbs. chicken, cooked mushrooms more than recipe said & had to add more butter to pan when mushrooms were done. Wisked flour w/melted butter before adding 1 cup OJ(skipped concentrate & water).Added onions and broccoli same time as chick & rooms. Waited until very end to add two cans of Man. oranges (already at room temp). Just mixed & served over rice.

Spinach and Rice (Spanakorizo)

I think this turned out the way it is supposed to. My parents and I and my wife all thought it was good. I cooked it for 40 minutes to get the rice to soften up. Is the rice supposed to be al dente? I used froz spinach and my own chicken broth for the water. I added a whole cup of rice and with all the liquid I added didn't think it would be a problem to get it cooked. My parents liked it without the feta and lemon. My wife and I liked it with. I think I will partially pre-cook the rice in broth before adding to other ingredients.

Asparagus Rolantina

This is surprisingly very good. I used 1/2# of swiss (6 slices), pre-sliced & packaged deli ham 3/4# (12 slices)& about 1 1/2# of asparagus(steamed). No toothpicks just seam side down & worked fine. Make sure the asparagus is cooked to your desired doneness before rolling. Doesn't really cook very much in oven. Avoid the temptation(I didn't)to add more butter, you won't need it. Cooked full 20 minutes, let rest 5. Another surprise was that I didn't think it wasn't too salty but my wife did. Don't forget to add pepper. It really added something when leftovers were reheated next day.

Fiesta Enchiladas

This is a very good recipe, it just needed spicing up. Fills you up but not out. Instead of 28oz Tom Sauce, I used 16oz salsa & 2/8oz cans of Tom Sauce. Doesn't say how much taco seasoning to use so I added one of those premeasured envelopes. I baked covered without cheese topping for 15 min. Applied cheese after removing foil & baked for another 15 min.

Antojitos Minis

This recipe was a big hit at last year's Cinco de Mayo party. You can put any of your favorite combinations in the cups and as long as you have something to bind them together a bit you are in good shape. I am purchasing four (4) more muffin trays before next month's party so I can make more at one time!

German Sausage Chowder

Very Tasty. The kind of sausage you use will make all the difference. Used less water than what it called for and half the swiss cheese. Also used non-fat evap milk. Was thin but very good. Had shredded red cabbage available and used it.
