Super Al's Cocktail Sauce

Size does matter. Best result came from smaller mushrooms because you can pop them into your mouth whole. Used baby bellas, cooked at 400 degrees for 10 minutes. Get the finest graded cheese you can and don't fret if it all falls off. Use parchment paper in pan to keep all of the juices close. Trying with scallops next.

Applesauce Cake I

I love to cook but hate to bake. This was easy, good and makes a lot. I doubled the recipe for a 10 x 14 pan and came out great. What more can you ask of a recipe.

Simple Kale Soup

Sean's Mommy's Roasted Root Vegetables

Didn't have parsnips or butternut squash. Added regular potato, garlic cloves and onions. Got turnips and rutabaga from our CSA and never cooked or tasted before. If, like me, you never had these veggies before then this recipe is a great introduction to them.

Bacon Turnip Mash

This only my second recipe with turnips. Boiling them takes some of the flavor out. These tended to be watery. I had to drain alot of liquid out before serving. Roasting them preserves the flavor much better. Even adding bacon I had to add more salt and pepper to taste better.

Baked Haddock

I sub'd pollock for haddock. Very bland recipe. I gave it 2 stars because the cooking process was exceptional. I took others advice and raised the fish off the bottom of the dish and it cooked perfectly. The filets were thick and I cooked for 20 min. at 500 and were cooked to perfection. Not dry at all.

Don't, don't don't add all the lime in recipe. Only put in a table spoon until you taste it. I halved the recipe amount to one lime and it over powered the whole dish. I will make again because it could work with less lime.

Easy Broccoli Quiche

Even adding extra garlic and frying the veggies in bacon fat and added the bacon it turned out bland. I also sub'd swiss cheese for the mazz. I gave it 2 stars because it was easy and held together well. ALICK's advice about the cheese raincoat was invaluable!

Pizza Casserole

A great recipe! I too used turkey pepperoni and omitted any other meat. Sauted the veggies in a little bacon fat (calm down, it was only a tablespoon). Put cheese as recipe instructs but will probably mix in next time. Only fed 3 in our house. You can add ingredients the same way you select toppings for your regular pizza. Used jar spagetti sauce and was fine.

Byrdhouse Spinach Soup

Very good and very easy. Make sure you chop up the spinach. I got lazy and didn't. You know you can't get a whole cooked leaf of spinach on a teaspoon? My wife made me wear a lobster bib.

Butternut Squash Soup

First, thanks to all of those reviewers that said to use only 1/2 of cream cheese. I can't imagine you would be able to taste the squash if you used the amount listed in the recipe. This was good but I couldn't give it 5 stars because I could easily taste the cream cheese. I prefer recipes that are the sum of their parts.

Potato Salmon Patties

I so wanted this to taste good. I like canned salmon patties but this recipe is not good. From the first bite all I tasted was the instant potatoes, then a fishy taste. Seems the ingredients took the salmon flavor away and replaced it with bad fishy potatoes.

Grilled Fish Steaks

The sodium content scared me but I think I lowered it a bit by substituting 1 tsp.lemon pepper and omitted the 1 tsp. salt and 1 tsp. pepper. I still added the called for lemon juice. Used this on fresh pollock. It was wonderful! Even my father who barely tolorates fish had a second helping.

Cream of Sweet Potato Soup

Very easy to make. A lot of flavor. I used my own chicken stock which gave it more flavor. Next time I will skip the one or the other peppers. You don't need both. I like it spicey but others may not.
