Dilled Shrimp Salad

Great shrimp salad, quick and easy! I used less lemon juice and also only put in enough light mayo to hold it together. Great in a wrap sandwich!

Cake Mix Cookies I

Used the same method to make Oatmeal Raisin cookies, and they were excellent! One package yellow cake mix, 2 cups quick-cooking oats, 1 cup sugar, 1 cup veg oil, 2 large eggs and 1/2 cup each raisins and nuts. I used 1 1/2 teaspoons of maple extract (instead of vanilla) and walnuts. Bake on parchment paper, they don't spread out too much and stay soft inside, slightly crisp outside. My husband loved them, and he "only likes Tollhouse cookies."

Chocolate Mexican Wedding Cookies

I made these cookies and Mexican Wedding Cookies I for a Cinco de Mayo party - the adults and kids loved them. Soft, pillowy texture if you bake on parchment paper. I will make again!

Elisa's Famous Fudge

Perfect results; very easy and delicious. I called it Chocolate Butter Pecan fudge and my family loved it. One note - I found the butterscotch taste to dominate the chocolate, so if you prefer more of a chocolatly fudge, adjust the proportions of the morsels.

Peanut Butter Haystacks

Unbelievably simple and delicious. After tasting at a cookie swap, I immediately looked up the recipe. I followed others' advice and flattened mine a little to make easier to bite. Had to chill mine to get them to totally harden, but I doubled the recipe and may have gone heavy on the peanut butter. Will DEFINATELY make again!

Mexican Wedding Cakes I

Excellent and easy - I followed the directions as listed, kept the cookies small (about 3/4 to 1 inch) and then sifted the powdered sugar over the warm cookies for a perfect presentation. One tip - I always line my cookie trays with parchment paper. Took these to a Cinco de Mayo party and they were a hit with kids and adults alike! I made the chocolate variation on this site, as well - both are keepers.
