Kentucky Bourbon Balls

I have used this recipe for over 40 years and they are always perfect. I use dipping chocolate because using paraffin is not supposed to be consumed (read the warning on the box). I purchase my dipping chocolate at a cake/candy store or you can purchase on-line. Wilton makes dipping "melts" in milk chocolate, white chocolate, semi-sweet and dark chocolate and is available at Wal-Mart. I chop my pecans very fine, cover with bourbon and do not put a nut on the top. Good quality bourbon, butter and powdered sugar insure a good product. My dipping chocolate is melted at half power in the microwave (stirring often because it will scorch) since even one drop of water ruins your chocolate.

Round Steak and Gravy II

This recipe is great. I have an iron kettle so prepared the entire recipe as follows: I seasoned each piece of steak with salt and pepper, lightly dusted with flour and browned in a small amount of olive oil with 1 clove of minced garlic. I put a layer of sliced onions on top of the meat. I mixed a can of Campbell's Cream of Celery soup (that's what I had on hand) and a can of Campbell's French Onion Soup and a full can of water (rinsed the cans with this water) and poured over the browned meat. Put the lid on and baked in a 325 degree oven for 2 1/2 hours as instructed. This came out tender, delicious and supplied plenty of just-thick-enough gravy for our mashed potatoes. I think searing the meat locks in the juices of the meat and that's the way my mother taught me to do with any roast, steak etc. I do not understand how any of the steak could be dry or tough if the liquid completely covers the meat during the cooking process. I was also taught to cover any meat (with foil or a lid) while it's cooking. However, those inexperienced cooks may not be aware of these helpful hints so it's always a good idea to read the comments when preparing a new recipe. I don't think there'd be any problem putting this in a crockpot. Little preparation time is needed and the results are delicious.

Vanilla Ice Cream

This was dreamy and creamy and so easy. It is not too sweet and I did not notice that my lips were greasy. I'm sure it would be great to add peaches, strawberries, chocolate, chips or whatever.

Sweet Onion Pie

Easy Meatloaf

Chocolate Ganache

This ganache is wonderful and so easy. I made a chocolate cake roll with chocolate mousse filling and poured the ganache over. Very impressive for chocolate lovers. I halved the recipe and added the butter for a glossy look. Thank you for the recipe.

Mom's Simple Dumplings

These were wonderful. I followed the recipe exactly and had to add a little more flour as the dough was very wet but the came out fluffy and perfect. I had baked a turkey and used the drippings plus a can of chicken broth and additional water. The best recipe I've found.

Simple Scones

These are so good. I made cranberry/orange. I cut my butter into 1 tbsp chunks (didn't take time to freeze the butter) and put in the food processor with the dry ingredients (including whole dried cranberries) and pulsed until coarse crumbs, then added the sour cream, orange peel and egg and pulsed again until dough formed a ball. What a breeze, no fuss, no mess, no nicking my knuckles on the grater. They came out light, moist and full of flavor. I will definitely make these again, maybe for Easter morning breakfast.

Classic Peanut Butter Cookies

These are very good, they are chewy, soft and easy to half the recipe (which I did). I did not find it necessary to add additional flour and/or PB which would throw the additional ingredients out of proportion. I used JIF smooth peanut butter so the taste was mild. If you use a natural PB, the taste would be bolder.

Italian Spaghetti Sauce with Meatballs

My husband loves meatballs with his spaghetti and I'm still looking for a good recipe. I did bake my meatballs and they were good (texture and flavor). The sauce was more garlic than we care for and we both like garlic. I thought the sauce was thick enough without the tomato paste (probably because all I had was crushed tomatoes)so I didn't put that in. I also forgot to add the basil, but didn't miss it. I made it in the crockpot which was very easy and it wasn't necessary to fuss over the cooking part.

Fluffy Pancakes

I used cider vinegar because I didn't have any white - no vinegar taste at all, everything else was by the recipe. These were light, fluffy and delicious. I also added blueberries and they were great. No more A.J. or Bisquick mixes for this pancake lover and yes, they are better than IHOP.

Strawberry Cream Roll

I have made this recipe 2 times and it was wonderful both times. I did add lemon zest to the cake batter, beat the eggs 5 minutes and baked it exactly 11 minutes. There were no crusty sides. Some reviews said they had trouble removing the towel,you may need more powdered sugar on the towel. I put the strawberry gelatin powder in the whipping cream the first time and did not much care for it. I used 2 cups whipping cream both times and sweetened it to my taste. I simply washed, dried and sliced the strawberries and placed in an even layer on the whipped cream layer, rolled up the cake roll and iced the entire roll with the remaining whipped cream. Absolutely delicious and very pretty. Thank you for the recipe and reviews.

Chewy Brownies

I have read the previous reviews and disagree that these brownies are chewy. They are more like a light-chocolate cake with walnuts. I have not been able to find a brownie recipe that can compare to the box kind. If anyone knows of one, please post it, in the meantime, I'll just keep buying the DH brand since it's the best. I enjoy reading the reviews and am always amused that people take a recipe and add/subract ingredients to make their own recipe - why not just enter your own recipe in the first place?
