Pico De Gallo

This is a pretty good basic recipe. I would add some bell pepper and leave out the green onions. Also for those of you who think it's too watery, I always chop my ingredients, especially the tomatoes, into a collender to drain off the excess liquid. Fresh lime juice is definitely a must. Also fresh garlic. A dash of olive oil also adds a little more flavor.

Coconut Cream Cake I

I never make a cake with a cake mix but this sounded really good so I tried it. I have only given this cake three stars because it is made with a box cake. This cake was okay but I think using a white or coconut cake recipe from scratch would make it a 5+ star cake. I will try it and see.

Kickin' Collard Greens

I love collard greens and so does my husband. However, this recipe lacked something in the taste. It was too bland. I did omit the olive oil and used the bacon grease and I did add some vinegar in hopes it would give it more taste and added more garlic and red pepper flakes but it still lacked something. If I make this recipe again I will try adding more bacon and some brown sugar as one person suggested but I don't know if I will make it again.

I make this exact recipe for St. Patrick's Day dinner every year. I first found it in an Irish cookbook I bought. I have read other versions but this one is the best as far as I'm concerned and I will continue to use it. The melted butter in the middle just seems to add something extra.

Buddy's and Bubba's Homemade Dog Food

My dog loves this food. She is 14 years old and has a lot of skin problems. I have tried a lot of different remedies for her problem and this recipe has done more for her condition than anything else. I also treat her affected areas with coconut oil and that also has helped a lot. I found that using a pressure cooker to make this recipe cuts down on cooking time considerably. I will continue to give this food to my dog and will probably try some of the alternative suggestions I read in other people's reviews to change it up a little from time to time. Also I am kind of confused about the garlic issue. I have been giving her a pill that is brewer's yeast and garlic that is supposed to be for healthier skin and now I am wondering if I am doing something wrong.

Vegetarian Kale Soup

A friend of mine gave me a bunch of kale out of his garden. I did not know what to do with kale so I went to the internet looking for ideas. I found this recipe. I decided to try it. I did make a couple of changes. Since we are not vegetarians I added some meat from a few beef ribs that I pressure cooked. Instead of cannellini beans I used pinto beans because that was all I had. I added one large carrot cut into bite size pieces. I used six cups of chicken broth and two cups of broth from the ribs I pressured. I cut back on the Italian seasoning. It turned out wonderful. My husband liked it before I was even finished putting it together and the next day it was really delicious. I defintely will be making this recipe again. Next time I might try a different green like collards or turnip greens just to see if it will be as good with other kinds of greens.
