Chef John's Swedish Meatballs

The aroma of these as I was mixing them were wonderful, and the flavor was great too. However, there are a few key ingredients left out of the original recipe post, so this is how I made my gravy: 2 T butter 1/4 cup flour 1.5 cups beef stock 1/2 cup cream 1/2 teaspoon sugar 1 teaspoon Worchestershire sauce 1/2 teaspoon salt 1/4 teaspoon pepper The recipe doesn't say how many meatballs this made. Making 2-3 tablespoon-sized meatballs gave me about 34 pretty big meatballs (like, spaghetti-and-meatball size versus IKEA meatball size), which needed to cook longer than the 20 minutes allotted. Mine ended up cooking for 40 minutes, and were slightly tough on the outside, and the temp only got to 150 inside with my thermometer, but they were definitely done. I think next time I will cook for a little longer at a lower temp to not have the outside so overdone. Also, the recipe called for making the gravy before making the meatballs, but I would definitely make the gravy AFTER they are cooked since it really doesn't take more than a few minutes to whisk up. The amount of gravy made with my measurements there only really coated about half the recipe (the hubby is a gravy fanatic, plus we wanted some for the potatoes too), so I'd at least double it next time since it's very thick, and doesn't stretch far. Because I was waiting so long for the meatballs to cook, the gravy got super thick, but a little splash of beef stock helped loosen it as I warmed it back up on the stove.

Easy Carbonara Sauce

So delicious! And so quick to make! Perfect for a wholesome week night meal. I was concerned about the lack of seasonings, but due to the saltiness from the bacon, and the seasonings from the jar of sauce, it didn't need a single adjustment, and my kids ate two servings. We served this with thin whole wheat spaghetti and it paired beautifully.

Baked Pears

I'm familiar with baked fruits for dessert, and am normally a HUGE advocator for butter, but the butter just sat inside the pear as it baked, and when I took it out, it splashed everywhere, and ran out all over the place when I cut it, mixing with the ice cream. The amount of cinnamon was quite a lot compared to the small amount of pear flesh that was leftover after I was done scooping out the insides, and if I made this again, I would combine all the ingredients together (after melting the butter) and then just drizzle over the pears in the dish. Maybe even cut whole pears up in slices beforehand to minimize the waste from digging through the top to get to the seeds in the center. For people not used to eating fruit, this might be a way to get them to eat it, but it's definitely not healthy nor indulgent, and the ratio of butter/sugar/spice to fruit was just way, way off for me. :(

Christmas Pork Roast

Despite getting the wrong cranberry sauce at the store (we got the regular ol' cranberry jelly), and not having any ginger, this was amazing! The kids LOVED the glaze (while the roast was resting, I poured it into a sauce pan and added some cornstarch to thicken it up some) and kept asking for more, the hubby kept remarking at the flavor and the juiciness of the pork, and while it was cooking, it made the entire house smell divine. This is going in the "tried & true" list for sure.

Summer Fruit Galettes

This was delicious and super easy! I had one pie crust left over, and didn't feel like making a full pie, so when I came across this recipe, I was enthralled! I halved the fruit easily, but needed a little more time for it to bake since most of the fruit was frozen, and added about 10 extra minutes to my fresh pluot, and frozen blueberry & strawberry filling. Gorgeous presentation, and a total snap to prep. Thanks!

Peanut Butter and Banana Chocolate Truffles

The combination of the chocolate, banana and powdered sugar were great, but I tasted little to no peanut butter. Overall, if you like the chocolate+banana combo, these are delicious!

Pork Carnitas with Cilantro Tomatillo Sauce

As a SoCal native, this recipe was a taste of home for me! Flavorful, juicy, with plenty of seasonings to make me go back for more. LOVED the tomatillo salsa way more than I expected to (it paired so beautifully with the meat!), and when placed on top of homemade corn tortillas (from Allrecipes too!), it was seriously one of the best meals I've had in a while. My husband told me that it "tasted like awesome," so I do believe this recipe's a keeper. ;)

Chiliville Chili

Me & my husband loved this chili! Much lighter than other recipes I've tried, but still super duper filling. I thought that since it wasn't so thick or heavy, I would be able to eat more of it, but I was pretty full after just a small serving. It was hot in that it helped raise your body temp and make you sweat as you ate it (so perfect for those cold winter nights!), but it wasn't very spicy, which was great because I'm not a fan of those "set your tongue on fire for the sake of it" types of chili recipes, and don't like spicy stuff in the first place. I paired it with Grandma's Buttermilk Cornbread (cut up "croutons" to sprinkle on top, along with some shredded cheese) and it was AMAZING.

Pesto Steak and Arugula Pizza

Even though I cooked the steak to well-done, it was still absolutely flavorful and delicious. I added the zest of the entire lemon to the marinade to really punch up that citrus flavor before brushing it on the meat, and WOW - easiest steak and most delicious steak I've grilled yet! I bought ready-made pizza dough from the local grocery store, and made it into 4 "mini" pizzas (we cut them in half for each of my 3 kids, and there was still an entire mini-pizza left for my husband to take to work the next day for lunch) instead of one giant one. No change in cooking time, either. 15 minutes did the trick for mine. Quick, easy, packed full of amazing flavors, and definitely a repeat at my house!

Pizza On The Grill I

The dough to this was PHENOMENAL!! I must have eaten quite a bit as I was "testing" it for doneness right off the grill! The garlic folded into the dough really made it stand out, and I could have just eaten crust all night. We ended up grilling a few empty ones and cutting them into breadsticks to dip into extra marinara sauce. Deeelish!

Cinnamon Yogurt Dip

As written, I think the cinnamon would have been too much. Like others suggested, I cut it down to 1 teaspoon, and it was fabulous! It was a touch too sweet as well, so I may reduce the sugar/honey if I continue to use regular vanilla yogurt, although it would probably counter the greek yogurt's richness should I try that next time. Can't wait to experiment though! Never thought about putting these ingredients together but they were wonderful! :)

Honey Wheat Sandwich Rolls

Made these to go with the Johnsonville Italian Sausage Sliders and they were AWESOME! mine made 18 rolls using a Coca-Cola glass to cut out fifteen roughly 3" diameter circles, then hand-forming circles for the last three rolls. About 13 minutes in my oven and they were done, and I could have eaten half a pan of them right then and there, they were delicious!!

Italian Sausage Frittata

This was flavorful, and very easy to cook! I subbed broccoli, onions & green bellpeppers because that's what I had on hand, and even my super picky kids enjoyed it. My sausage was still half-frozen when I sliced it, so I cooked that first in the pan, then added the veggies to cook in the oil. I think I probably should have drained the oil first (I think I read the recipe too fast and didn't see where it said to cook the sausage first then add the cooked sausage to the pan). It was definitely delicious, but I will do that next time to reduce the fat and make it look nicer since the oil rose to the top when I poured the eggs in. Thank goodness it wasn't for company, but overall, a good, fast recipe and one easily adjustable to accommodate whatever veggies you have available.

Kale Orange Banana Smoothie

My very first taste of kale...and I can't even taste it! lol. Delicious, and tastes exactly like an orange-banana smoothie, with some texture. I can definitely see myself drinking this every morning, and can't wait to change up the fruits a little with each drink. :)

Easy Chili I

We doubled this recipe but only kept the original amount of jalepenos (and it was plenty hot enough for us!!), and while it seemed good, it was not as richly-flavored as other chilis I have had. We added a little bit of Worcestershire sauce and some brown sugar, and when serving, added lots of shredded cheese and a dollop of sour cream, and it turned pretty amazing. But the recipe as-is needs a little boost in flavor.

Grilled Steak and Asian Noodle Salad

I normally have a sweet tooth as well, but this dressing was for sure pretty sweet, and there was a lot of it. We used organic lo mein noodles instead of the spaghetti, and I also subbed snow peas for snap peas since they looked fresher at the store. I had squeezed an entire large lime into the marinade (so more than the recipe called for), but it still wasn't enough to cut the sweetness. The Asian sesame dressing I had chosen was the Annie's Organic one, so maybe I will just need to experiment with others to see how they flavor this. Also, our family is big into veggies, so I would probably double the amount of snow peas for next time. The peppers and carrots made it plenty sweet, so I would leave them as-is, but for sure, it needed something to balance the flavors a bit better. All in all, another repeat, and that meat was GREAT, and so easy to do!

Strawberry Sauza®-Rita

BEST of the three I tested out during my Sauza Blue Silver Tequila "Shake It Up - Girls Night In" party!! Customized it a little to sub out the strawberry liquor with fresh strawberries, and it was the first to go. SO GOOD.
