Fish Tacos

Excellent recipe all around. Used shredded cabbage/broccoli mix instead of just cabbage and it was great.

Green Slime Smoothie Turned Purple

I just made this for my kids. Didn't have frozen strawberries so used a combo of frozen cranberries, raspberries, and blueberries. Also used a frozen (vs. non-frozen) banana. Cut the ice back to 1/2 cup and added about 1 to 1 1/2 cups water. The color was a deep purple (rather than green) and the kids loved it. Great way to get spinach in their diet!

Fudge-Nut Oatmeal Bars

These are so delicious! I made them as written except I left out the nuts since my daughter is allergic. They were irresistable! I spread the remaining oatmeal/butter/brown sugar mix over the top so it covered all the chocolate. The first time I used a bag of milk chocolate chips and the second batch I used a bag of semi-sweet chips....both were equally good. This will become a family favorite, for sure!

Roasted Winter Vegetable Soup

This soup was very tasty. I roasted the vegetables several days in advance and kept in the fridge. Tonight I simply made 10 cups of chicken soup base with bouillon cubes then added the vegetables and pureed. We added 1/2 pint heavy cream before serving and skipped the balsamic vinegar and oil. Would definitely make again.

Easy Strawberry Lemonade

I first pureed almost all of the strawberries with the lemonade concentrate and one can water. Then I added this mix to another 3 1/2 cans (not cups) water. It was delicious, and really brought out both the lemonade and strawberry flavors. I did float a few frozen strawberries in each glass when serving.

Gourmet Tuna Salad Sandwich

I used leftover cooked brook trout (flaked) instead of tuna and it turned out great. I would definitely make it again! There were no leftovers!
