Unbelievable Spinach Calzones
I'm not sure if they were unbelievable, but they were very tasty indeed. I used frozen pizza dough, my pizza spice grinder instead of the Italian seasoning and 1 1/2 tbs mayo, like another reviewer suggested. I also sauteed some mushrooms in butter and a dash of garlic powder. Brushed the tops with melted butter. I did have a difficult time shaping the pizza dough, so they weren't a beautiful presentation, but delicious anyway! I was able to get 12 calzones out of the filling. Dipped in homemade spaghetti sauce. We will definately be putting this recipes into rotation- my kids LOVED it, my husband loved it and I really enjoyed it too. very easy for a busy night, if you have everything frozen ahead of time.

Beer Butt Chicken
My big plans to this on the grill were spoiled by rain, but it was still great from the oven. I did two, side by side in a foil lined roasting pan. I rubbed the skin with the seasonings and then brushed on the butter. It took about 1 hour 45 minutes at 350 degrees. Everyone loved it- we ate one for dinner and the other will be great in a chicken salad for lunch today. Thanks for this! The chickens stood fine without a fancy holder- I was a little worried that I didn't have one. Very easy and soso yummy!

Chicken Enchiladas I
This was really good, although my kids are still a little wary of Mexican. I made it exactly as stated. Aside from having to cook the chicken, it was incredibly fast. I browned and cut up the chicken in the afternoon while I was making lunch and when it came time to make dinner, I threw it all together in about 15 minutes. I served it with refried beans. Definately a keeper!
