Authentic New Orleans Red Beans and Rice
I've made this for guests several times and it's a huge hit. I just throw it into a slow cooker so I can forget about it! Even better the second, third day as the flavors combine. Try making it a day or two before, then reheating it in a slow cooker. Yum! 8 cups of water is kind of excessive if you're eating right away- 6 is more than enough. After a couple of days, it all gets absorbed.

Beef Wellington
Wow! I made this as a special occasion dinner, and it came out fantastic! I took the advice of several other reviewers and used individual filet mignons. I also baked it on a wire rack to keep the bottom from getting soggy. It was rich and delicious, and not nearly as difficult as I thought it would be.

Quick and Super Easy Chicken and Dumplings
So easy it was almost embarrassing. It tasted great too, although definitely not a 'from scratch' taste, as others have commented. I think next time I've got a rotisserie chicken in the fridge I'll use that instead of canned.
