Grilled Fish Tacos with Chipotle-Lime Dressing

Reviewed: Sep. 21, 2014
amazing! for the dressing - i used 2 whole limes & zest and put in the food processor bx my chipotles were a bit chunky. i also used more chipotles than called for and it was hot! but it was great! i used regular sour cream instead of light, i think next time i will just use plain yogurt. i don't like tilapia so i used cod. i don't think one lb of fish cuts it for more than 2 people so i bought a bit more...next time, i'll buy even more as we barely had enough. i bought already cut up slaw mix and mixed my dressing into it...i made my own salsa with the cilantro, tomatoes, jalapeno, onion and lime juice. i used small flour tortillas and we had 3 each. there were no complaints! thanks so much for sharing this recipe! this is a keeper!

Chipotle Cream Chicken

Reviewed: Sep. 14, 2014
it wasn't my favorite but it wasn't bad at all. i added 2 chipotle peppers without the seeds but found it not hot enough so i added more adobo sauce. we made rice and had it with tortillas. the cilantro is a must for this dish. thx for sharing your recipe.

Pasta e Fagioli I

Reviewed: Feb. 23, 2014
a very easy, simple but delicious soup. my family and i thank-you! i never change a thing to the recipe except for the pasta selection. i usually use mini stars, or mini bow ties. always cook the pasta separate and add to your bowl...never to the soup.

Baked Salmon II

yum! i tried this tonight and it turned out great! i used 4 cloves of garlic, and added some dill weed. i cooked my large fillet of salmon for 45 minutes and it was cooked perfectly! (this is the first time i've cooked salmon properly - i've always over cooked it but not this time!!) i also made basmati rice and steamed asparagus w/lemon juice and fresh parmesan and salt & pepper! my family loved dinner! thx for sharing this easy to do recipe! much appreciated.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Reviewed: Aug. 29, 2013
i love anything with quinoa. this salad was good. i found the avocado was a bit strange in this salad...i didn't think it went well w/the feta. i did not cook my kale, i just added it to the hot quinoa (it cooks it for you) the sauce; i was a bit scared with how much dijon mustard was required but it tasted quite good. thx for sharing this recipe.

Fresh From the Vine Tortellini

Reviewed: Jul. 30, 2013
very good recipe. i added some balsalmic vinegar to the oil/salt/pepper mixture to coat the tomatoes. i used sunflower kitchen zest-o pesto as this is my favorite pesto. i used more basil leaves than required and i used way more fresh grated parmesan chz. i also like to chop up the stems of the basil and put in the olive oil when you put in the garlic...it gives it more flavor. i will keep this recipe to make for many more occasions. thx!

Oatmeal Pancakes II

Reviewed: Feb. 4, 2013
i used sprouted whole wheat flour instead of all purpose, and i used 1% milk. i didn't have a very big food processor so i just mixed the dry ingredients in it and then did the wet separately. i have to say, these were fabulous. i am not a fan of pancakes but my son is, and even my hubby loved them!! we all had seconds! oh ya, i doubled the recipe and that gave us probably at least 3 each but i put about 1/4 of a cup in the pan (actually a bit more than this) these pancakes are really filling! they were so light and fluffy. i only put in half the required salt and oil. thx so much for this great recipe! my family gave them a big thumbs up.
