Braised Balsamic Chicken

I think some people don't like an overwhelming taste of balsamic vinegar which is why they don't like this recipe. You can always tone it down by decreasing the vinegar and adding a neutral ingredient such as cream (I made mine creamy with a few chunks of cream cheese). This will give you a juicy sauce to add in pasta to tone the balsamic down some more.... that's what I did and it was a hit.

Garlic Chicken

This recipe is good with variations. First off, I added my own blend of Italian spices to the bread crumbs... don't forget to add the salt and pepper that this recipe forgot should have included. And I used panko instead of regular bread crumbs... it gives it an extra crunch. You could probably do half bread crumbs and half panko. I served it with roasted potatoes. Next time I'll make sure to serve it with some gravy too.

Mouth-Watering Stuffed Mushrooms

I always get compliments with this recipe. But I think the mixture becomes a little chunky because of the cream cheese. I prefer a smooth texture to the filling so I'll try it with half cream cheese and half sour cream next time.

Broiled Tilapia Parmesan

It's only 5 stars if you modify it. I took the others' advice and added garlic powder and paprika; I lessened the lemon; and added panko crumbs. I doubled the mixture a tad bit because I wanted to add it to both sides of the fish instead of just one side. Instead of broiling the fish and then adding the mixture, I spread half the mixture on, baked it for about 10 mins, and then broiled it for 5 minutes. Then I flipped it around and spread some more and did the same. It's delicious! If you want a spicy kick, add some crush pepper too.

Jay's Signature Pizza Crust

Every good!! A few tricks: 1. cook the dough half way before adding the sauce and toppings; and 2. add italian season, pamasean cheese, and cerole cajun seasoning on pan with the dough rolled on top of it (this adds a zing of flavor)

Spicy Oven Fried Chicken

VERY YUMMY!! I also used Frank's hot sauce, it was the right amount of kick. If you're like me, you can increase the cayenne pepper for an extra spicy touch. I usually don't use measuring tools when I cook, so I added all the ingredients by visual scale; therefore, no matter how you make this recipe, you can't go wrong. I added oven baked fresh cut fries and biscuits to complete the meal.

Chicken in Creamy Pan Sauce

it was actually pretty good. Some alterations I made was: 1)I used fat free cream cheese and turned out yummy with less the calories. 2)I also added some mushrooms for some more flavor. 3) added some garlic salt with the flour for some flavor with the chicken

Chicken Tortilla Soup I

In order to make it an actual "healthy" soup, I replaced the canned items with fresh ones... such as: make a puree from fresh tomatoes to replace the canned tomatoes, boiled black beans instead of canned beans, used real chicken broth instead of canned broth. Trust me, it makes a big difference in the taste when you use fresh ingredients!
