Best BBQ Rub in Texas

I needed a rub recipe for beef ribs quickly & found this one. Even though we did not have seasoning salt, the dry mesquite mix or the time to let the rub sit on the meat for 2 hours, our ribs were great. My husband did not even use his favorite BBQ sauce. FYI - I reduced the recipe using the calculator for a portion servig 6.

Roast Pork with Maple and Mustard Glaze

The whole family loved this recipe. The combination of the sweet and salty with the pork is terrific. I wasn't sure about using the mustard, but followed the recipe and was glad I did. The first time we used boneless pork chops, the second a boneless pork loin roast. Both were great. Watch the amount of salt you use carefully since the soy sauce has so much in it, too.

Ellen Szaller's Mashed Potato Pancakes

Great change of pace. Used leftover mashed potatoes, substituted whole wheat flour, and skipped the corn syrup simply because I did not realize we were out of it.

German Chocolate Cake III

Made this cake by request for my husband's big 4-0. Made 1.5 the frosting recipe & 4 X the chocolate "drizzle". Although it didn't "look like his mom's g-choc cake", he loved it. Only drawback is that I can't seem to make this cake, or any g-choc cake, pretty. The choc drizzle helped, with a design on top.

Special Buttercream Frosting

I used the 1/2 butter 1/2 shortening version of this recipe for a sculpted cake with a lot of detail. I made sure I used a smooth knife dipped in cool water to spread the frosting and used many different decorating tips. The frosting behaved very well for all uses and tasted great. I beat the second batch at a higher speed for a slightly longer time, resulting in an even smoother texture. I will use this recipe again.
