My favorite family cooking traditions
Growing up was mainly Italian dishes. My mom makes the best lasagna!! Pasta Fagiola and chicken cacciatori are more favorites.
My cooking triumphs
Long ago, I made homemade cream puffs made with real vanilla and chocolate pudding. It was time consuming but I got the best reviews.
My cooking tragedies
When I 1st got married, I made complicated mashed potatoes from a gourmet cookbook. It took along time to prepare and it had to be watched over most of the day. I put the potaotes in a nice fancy bowl. My husband wasn't home yet so I put it in the oven to keep warm. Maybe 30 minutes later, hubby came home, went to get the potatoes and it was all burnt...bowl and all! The bowl just shattered as I went to take it out.

Flan Mexicano (Mexican Flan)
This was outstanding! I used all the ingredients but omitted the orange juice, orange peel and cornstarch. I used evaporated milk in place of the orange juice and I put the pie plate(didn't have flan mold) in the roasting pan without the damp towel. My mom and brother are big fans of flan and said that this was the best they ever had. Thanks for posting!

World's Best Lasagna
Growing up in an Italian home, this recipe is a bit similar to what my mom used. She used the pork,veal and beef mixture and maybe 1 can of paste. No fennel seeds. Used fresh basil instead of dried (big difference!) and maybe 1 tbs. sugar. Everything else is the same.

Salmon Cakes II
These were fabulous! I used 3- 6oz. cans (skinless and boneless) that I've purchased through price club. I didn't have fresh parsley so I used dried. Didn't have Cheddar cheese on hand so I used 1/4 cup grating chesse instead. Didn't use butter (I forgot) just olive oil and it still came out great! Will double up next time on hot pepper and Worcester sauce for more kick. Great with a tossed salad on the side. My son said it tasted like tuna so..BRAINSTORM.. after running out of salmon, I used canned solid white tuna with the same ingredients. Still good but salmon was better.
