Best Brownies

Thought this was delicious! I didn't have everything to make the icing so I improvised with some store bought fudge icing and store bought whipped cream cheese icing. I mixed them together and spread that on top. Yummy! I'll definitely be making these brownies again. So simple, so easy, and ohhhh so good!

Swedish Meatballs I

As suggested by others I, too, used Marla's meatballs and Jessica's sauce. It was totally loved by all! I've made it a few times now and it's ooooooh so good!

Drop Biscuits and Gravy

OMG! Wow! So easy and soooo yummy! The hubby and even my kids liked these biscuits. I haven't made the gravy, just the biscuits. They were so awesome. I'll be making these again for sure! I may add garlic powder and some cheddar cheese next time just for kicks but they are awesome as is.

Blueberry Muffins I

Awesome! I've made these three times so far. First time, I went ahead and did the 1 cup sugar and 1 cup blueberries like several others suggested. They were good but that was a lot of blueberries in a single muffin. They didn't last through the evening so they were still well liked. So the second time I made them as the recipe states, 1/2 cup sugar and 1/2 blueberries. These didn't make it through the evening either. Only one complaint, from my daughter, not enough blueberries. Go figure. This third time I did a rough estimate of 3/4 cup of sugar and 3/4 cup of blueberries. That seems to be just the right amount for us. Next time, mini muffins! And I want to try substituting chocolate chips for the blueberries as one person suggested.

Mock Chicken Fried Steak

This was totally awesome! The whole family loved it, even the kids! That's hard to do! I was going to change what I coated the patties in but my daughter and I stuck to the recipe and it turned out great! The hubby wished there was more! I made a nice, white gravy to go with it. Awesome! Will definitely make again and will be sure to take a picture next time! Yummmm-meeeeee!

Beefy Baked Ravioli

Excellent recipe! First time I used the cheese ravioli. We loved it but the kids weren't too hot on the cheese ravioli. Next time I made it with the beef ravioli and left out the pound of ground beef. Everyone was happy that time. This is a great meal that really doesn't take long to throw together. I used more than half the package of ravioli and I didn't measure the cheese, just eyeballed it. Tonight is the third night I'm making it! :)

Chicken Stir-Fry

This was awesome! Everyone loved it. I used a clove of garlic instead of garlic powder and a cup of fat free chicken broth instead of the water & bouillon. I also omitted the celery as my hubby is not fond of it. One thing I did add that is not in the original ingredient list was a tablespoon of oyster sauce...mmmm. My hubby went and got some peanuts out of the cupboard and put some on top. Delicious! I am soooo making this again! Thanks!

Blueberry Streusel Muffins

These were absolutely delicious! I ended up getting 18 out of the recipe. I only needed 12 for the muffin swap I'm going to so I had 6 extra. The extras only lasted like five minutes! I did increase the sugar to 1/2 cup as mentioned in a few other reviews. I didn't have any suggested lemon juice so I used lime juice. I did add a little extra milk as it was hard to stir. I made these with my 2 1/2 year old and it made for a lovely afternoon. My only problem was taking the wrappers off....the wrappers totally stuck to the muffins! Next time, I'll spray first. :) And there will be a next time! The hubby already asked when I was making more. :)

Beefy Cheesy Pasta

This was delicious! I've made my own hamburger helper stuff before....I really like how easy and simple this was. Everyone seemed to enjoy it, too! I followed everything the recipe said. I did use ground turkey instead of ground beef. I also added hamburger seasoning to the turkey as it was cooking...habit. The only other addition was a can of low-sodium beef broth. I alternated adding that with the sliced cheese....gave it a smoother and wetter texture. Oh, I did use penne pasta because that's what I had on hand. Excellent! UPDATE: I have also made this several times using the meat base and boxed mac & cheese. Turns out great that way, too!

Hamburger Skillet Supper

Excellent! When browning my 1/2 lean ground beef and 1/2 ground turkey, I added chopped onion, minced garlic and a little Kikkoman. I then added the broccoli (that's what I had on hand.) I added the 2 cups of water and the popular can of mushroom soup suggestion. I added the 3 packs from the ramen noodles and heated it all through. Then I added the 3 packs of ramen noodles and simmered while my rice was cooking. Loved it!

Honey-Orange Marinated Salmon

This was most excellent! The hubby loved it! I followed the recipe with what I had on hand. The only changes were white onion because that's what I had, an extra T of OJ because I had no sherry or apple juice, about 1t ground ginger because that's what I had, and a clove of minced garlic because we like garlic. And I tried reducing the marinade on the stove and putting it on my rice....sooooo yummy!

Quick Chicken and Noodles

I have made this recipe many times now. I can't believe I hadn't rated & reviewed it! If you're looking for an easy chicken noodle soup, this is the one! My kids absolutely love this! I do tend to use a lot more chicken broth than the recipe calls for but maybe I just like my soup....soupier. :) Instead of mixed veggies, I slice up fresh carrots. I have made this soup using boneless chicken breasts as the recipe states and with canned chicken....both had no leftovers when all was said and done! Love it!

Creamed Spinach II

This was excellent! I did use cream of chicken instead of cream of mushroom and added some sauteed onion and garlic as mentioned in other comments, also the 1/4 milk. Hubby loved it. Can't wait to try making it again but using more spinach, I used what I had from an already opened bag of fresh spinach....a little too creamy but it was my mistake. This is definitely a keeper!

Sweet and Sour Kielbasa

This......was.....so.....awesome! (Read that with the sing-song awesomeness it was intended to have.) :) I did make a few changes as per some of the other other reviews. I used 2 packages of turkey kielbasa, only 1 cup of ketchup, only 4 tablespoons of Best Life Spread, and I added 2 cloves of chopped garlic. The rest remained the same. Put it in a large pot on the stove, brought it to a boil then simmered while the rice was cooking. When the rice was done, the kielbasa was done. And the sauce is most excellent on the rice! I also served sauteed bell peppers. Thank you for sharing this recipe!

Salmon Tango

This was great! Fabulous even. The hubby and I totally loved it. I didn't have any white wine and it tasted wonderful without it. I will be making this again, possibly next week, and I will be adding some minced garlic to it and maybe some pepper. Thank you for sharing!

Refried Bean Enchiladas

These were soooo delicious! I actually add 1/2 pound lean ground beef, browned and a 1/2 pound lean ground turkey, browned to the bean mixture....makes the hubby happier. I've tried with corn tortillas and flour tortillas.....flour turns out much better as the corn tortillas tend to break when attempting to roll up. Definitely a keeper, I've already made this several times now.

Jazzy New Orleans Chicken

This was wonderful! A big hit for dinner! I used boneless, skinless chicken breasts and cut them into a little larger than bite-sized pieces. I also used one pound of turkey kielbasa. I did not add the rice to the pot, however, as my family prefers their rice separate. I had no problem with it thickening without the rice either and that was with using two cups of fat-free chicken broth. One can of diced tomatoes worked perfectly well as a substitute for the fresh tomatoes as mentioned by another reviewer. It was amazing! I couldn't get enough! Definitely making this again!
