Big Soft Ginger Cookies

Beef Loaf Deluxe

This is a hearty and good recipe. I added cheese to the meatloaf and used spaghetti sauce because I was out of plain tomato sauce. The meatloaf tastes great in sandwiches, too.

German Chocolate Fudge

This is SO easy to make. It only took me about 20 mins total to make the fudge, and I let it sit over night to firm up. It's very smooth, not crumbly at all, and has a great flavor. Makes a ton, so you can give it out as gifts.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

This is very easy to make and could easily be served for company. To make the dish spicier I used a bit more red pepper flakes and blended a few jarred roasted red peppers in a food processor and added them to the sauce (about 1/2 cup blended). I omitted the mushrooms. Next time I make it, I'm going to top the pasta with slices of sirloin steak.

Garlic Chicken with Orzo Noodles

To add flavor, I cooked the orzo in broth and add more red pepper. I also added romano cheese and let it melt into the orzo mixture.

Olive and Chicken Curry Crepes

15-Minute Marinated Chicken

If you don't have a grill, this marinade is also good for baking chicken in the oven. I put the marinade in a ziploc with frozen chicken and let it thaw and marinate overnight. The next day I put it all in a pan, wrapped the chicken with turkey bacon, topped it with cheddar cheese, and cooked it at 375 for about 30 minutes and then broiled for 1 or 2 mins to make the bacon crispy. Served w/baked potatoes & green beans. Good stuff.

Broccoli Squash Bake

I agree with another reviewer who called this crustless quiche. Mine did not come out runny and my family loved it. I do think that you need to add some spices and flavor to it, for example more cayenne pepper, thyme, sauteed onion and/or garlic. I also added more cheese, which may explain why it wasn't runny.

Broiled Scallops

This was great and easy, although I did modify it. I placed scallops in broiler pan with olive oil and drizzled with lemon juice. I had large scallops so I had to broil them on high for about 10-12 minutes. I drizzled minced garlic sauteed in small amount of olive oil and bacon drippings over the top of each scallop when they came out of the oven. They were great! Served with mashed cauliflower and asparagus. Seemed like a very gourmet meal.
