Spicy Eggplant

I eyeballed this whole recipe and it was good regardless. I do recall using more oyster sauce because who doesn't love oyster sauce?! I also didn't have chili garlic paste, so I chopped garlic and used some chili powder instead.

Spinach Chickpea Curry

This recipe is in my regular rotation, especially when I feel as though I've had too much meat in my diet.My boyfriend is indian, and as others have said, creamed corn is not part of the food culture. Tomato, is often used a base. Also, tofu is not used, but rather paneer, a cheese curd. Those substitues would make this dish more authentic, but I do think the original recipe is a unique twist. My boyfriend approves, so that's good for something!

Green Beans

Oh man, I am turned! I usually hate beans, but this was so good. There's no way to mess these beans up, I eyeballed the recipe a few times and they turned out great every time. I always skip the bacon to cut the fat, but I can imagine how good it must be along with it. However, if you don't have a sweet tooth, or prefer your food more savoury and salty, this isn't for you.

Janet's Rich Banana Bread

This was Ah-mazing! I used brown sugar instead of white because it was all I had. I mashed the bananas to a pulp and used greek vanilla yogurt instead of sour cream. Also I used baking powder instead of baking soda. This was so so so good! As it baked the whole house smelt heavenly. You're suppose to let it cool down, but i had a nibble when it came right out of the oven, I couldn't resist! I would suggest baking it a little less than an hour, since as mine came out a little browned along the edges. Still, that only made for a more crisp outer layer leading to a delicate soft and moist center. I bake in the night, so I hope it's still here in the morning for everyone else to have try!

Bodacious Broccoli Salad

Always a crowd pleaser! I try to go light on the mayo and I don't use bacon to cut the fat. Still just as good. This is one of those recipes you can tweak to your taste. Love that I can hide my veggies in this creamy goodness.

Golden Sweet Cornbread

This recipe is AMAZING! I used it for corn muffins, and they came out just like they would at any bakery. Many people say to cut the sugar, I agree ONLY if you're making savory cornbread to go with say chili. Otherwise, as a sweet treat, keep the sugar, and add maybe 3 tbsp of brown sugar. I substituted the oil with melted no salt margarine and used evaporated milk. I also threw in maybe 1/4 cup pancake mix and 1/4 cup more corn meal. Like many suggested, I also added a 1/2 tsp of vanilla extract and a pinch more salt. Although I made a few alterations of my own, I'm sure following this recipe to the T would make equally as great muffins. This is a keeper!

Green Grape Salad

I'm all about hiding healthy things in unhealthy meals, haha! This was great. Like others I also mixed red and green grapes for more dynamic colour. I skipped the pecans, only because I didn't have any. I also used plain yogurt instead of sour cream. They're virtually the same thing I guess. An easy sweet treat, especially for the summer backyard bbq or a picnic.

Carrot Rice

I was skeptical about this rice because it seemed to easy of a recipe. Also, I'm not a fan of veggies, why on earth would anyone put carrots in rice?! Anyhow, tried it, and boy am I glad I did. Added lots of cayenne to give it spice. Skipped the cilantro because I had none on hand. Flavour was still great, but green probably makes it more pretty. Also I used some natural peanut butter and peanut oil because I didn't have peanuts. Love love loved this dish! Paired it with salmon.

Cinnamon Pear Frozen Yogurt

This was such a unique twist on a frozen treat! I didn't have allspice so I used a tad more cinnamon. I also did not add sugar because I figured the juice from the pears was sweet enough. Next time I will make this from scratch, boiling pears and using honey as a sweetener.

I don't generally enjoy salmon, but this recipe was pretty good! Next time I would cut the salt is the only thing. I can't wait to substitute the salmon with crab for crab cakes, my fave!

Best Spanish Rice

Easy Recipe, easy clean up, easy crowd pleaser. What more can you ask for? Made this for Mexican night, added a dash of cumin and chile powder for a kick. You can also add some garlic. I'll definitely make it again!

This DID make a good cheesecake, however, the simple recipe you get on the back of a Kraft cream cheese tub does the job equally well. I'll come back to this when I want to feel like a real baker, haha!

Mexican Bean Salad

Can't say I followed this recipe to the T, but it still came out fantastic! Tastes just like the bean salad you would get at any supermarket or deli. I would follow the suggestions of halving the olive oil and vinegar, however, I do like how the beans soak up the liquids using the full suggested amount.

Garlic Mashed Cauliflower

I wasn't expecting this to taste exactly like mashed potatoes, but this recipe was lackluster. The consistency was amazing though, steaming the cauliflower really is genius. The seasoning needs work though.
