Brooke's Best Bombshell Brownies

Reviewed: Jun. 9, 2013
This is the perfect brownie - dense, rich chocolate flavor and ingredients that you would normally have in your pantry for one-of-those-days that you just gotta have a brownie. The only changes that I made was I only used 2 cups of sugar and I sprinkled the chocolate chips on top. Oh and I used almost 2 cups of cocoa powder cuz that's the way I roll :). And you must mix by hand, suck it up people. That's how these will turn out like a brownie and not chocolate cake. I made these for a party and the entire tray was gone. Now, I have to make another, oh darn. Wink wink.

Sweet Dinner Rolls

Reviewed: Nov. 6, 2012
I don't have a bread machine, so I proofed the yeast with warm water/milk/sugar mixture in my KA. Followed the reciepe but made into rolls instead of crescent shape. Though I don't think I let the dough rise enough during the 2nd rise because my rolls came out dense. Ohwell. Will keep trying and see if I can perfect it.

Stuffed Cabbage

Reviewed: Nov. 6, 2012
very good recipe, though I used napa cabbage because I like it better than the regular. Also aused fresh garlic and added half a chopped onion. I baked at 350, covered, in the oven for an hour. This recipe will definitely be in our dinner rotation. Very simple to put together.

Chocolate Zucchini Bread I

Reviewed: Aug. 29, 2012
This is such a nice recipe...though I did use 2 cups of brown sugar instead of the white and used 3 cups of grated zucchini. And I had to use 6 TBSP of cocoa powder & 2 TBSP butter to replace the chocolate squares since I didn't have it on-hand. The recipe made 24 muffins - for easy lunch packing for my boys. The kids loved them! What a great way to use up zucchini. Thanks for the recipe Diane.

Donut Muffins

Reviewed: Aug. 20, 2012
Ok, why did I make these?!! I can't stop eating them. It's 930pm and I had every intention to make these for my boys for breakfast. Oh well, they can have cereal. Actually these are so easy to whip up, I'll make another batch for them ;) I followed the recipe except I used butter and got 24 in my mini muffin pan. Also I think I'll decrease the baking time to maybe 12 min. - 15 got a little too brown in my oven. These are awesome. I will try different topping next. So good! Thanks for sharing the recipe

Colombian Stewed Flank

I made this in a crockpot (on high for 4 hours) and it was good, but not great. The meat was tender but the flavor was ok at best. I would make this again in a pinch.

Shepherd's Pie VI

Reviewed: Mar. 16, 2012
I hate when people change the recipe and then rate it, so here I go. I used tri-tip, because that's what I had. I cubed the meat (bite-size) then salt/pepper and added a 1/4 cup of Worcestershire. Browned the meat w/the sauteed onions and garlic. Added a bag of brown gravy and simmered until thick. Poured into 13x9 dish. Added frozen peas/carrots mix. Made mashed potatoes & added about 2 cups of shredded Dubliner(?spelling) cheese. Spread the potatoes over the meat and topped w/with more shredded cheese. Baked for 20 mins. @ 375 until golden brown. Total hit! Thank you for the recipe because I never made it before & the recipe gave me a guideline to make this wonderful dish.

Herb Roasted Pork

Reviewed: Mar. 9, 2012
I doubled the seasoning (personal preference) and baked @ 350 until meat therometer read 145. I also doubled the sauce for basting and to drizzle on top for serving. Let the meat rest for about 30 mins, sliced and served with rice. This was simply delicious. Thank you for sharing the recipe. This is definitely going into our dinner rotation. My husband wants me to try the sauce with chicken as well.

Chicken Cordon Bleu II

Excellent recipe. The sauce really makes the dish - my boys were licking their plates. I did finish cooking the chicken in the oven @ 350 for 10 mins. Then followed the recipe from there. I would definitely make this again.

Clone of a Cinnabon

Reviewed: Feb. 12, 2012
I'm never buying cinnamon rolls again. This is simple and good! I don't have a bread maker so I proofed the yeast by adding a package of active yeast to the warm milk & 1 tsp. of sugar - let sit for 10mins until frothy. Added the wet ingredients and with the hook attachment on the Kitchen aid, added the all purpose flour until a ball formed. Let rise and followed the recipe instructions from there. I used dental floss to cut the rolls. Baked @ 350 for 30 mins. DELICIOUS! Definitely worth the effort, though it wasn't much effort at all. My family loved it.

Too Much Chocolate Cake

Reviewed: Feb. 10, 2012
ok, with over 3000 reviews who needs another? Well, here's my 2cents. This recipe is good! I didn't have a bundt pan, so I made cupcakes and baked for 22 mins. They turned out FANTASTIC. It didn't taste like a "box" cake. Simply delicious. Didn't change a thing - though I think I will add Kahlua for an adult cupcake version. Make this...you won't be disappointed. 3/3/12 UPDATE: adult version :) - used 1/2 cup + more of Kahlua instead of the warm water. FANTASTIC!!!

Indian Tomato Chicken

Reviewed: Feb. 7, 2012
This is absolutely delicious! Beautiful flavors...I didn't change a thing - though I did not use a slow cooker. Just prepared in a large sauce pan. And cooked covered for on low for an hour. The chicken was so tender. Do not skip the food processor step - I served with Basmati rice and the family loved it. I would definitely make this again.

Cabbage Rolls II

Reviewed: Jan. 26, 2012
This is a keeper...I followed other reviewers and doubled the sauce, which is delicious! I also added about 5 garlic cloves (minced) - personal preference and had to use lime juice because that's what I had on-hand...oh, and I used ground pork because that's what I had. Baked covered for an hour @ 350. Perfect...my 5 and 3 year old boys loved it!

Cheesy Ham and Hash Brown Casserole

This was delicious and so simple to make during the busy Christmas morning. Combined all the ingredients, though I added mushrooms, and popped in the oven. An hour later, a delicious and easy breakfast that was enjoyed by everyone. Next time, I may add some spinach for color. A definite keeper recipe. Thank you for sharing.
