About this Cook
I am a social worker living in Kansas City. I'm currently on a health kick and looking for recipes that have fresh ingredients. This is quite a change from the comfort foods that I love to make! I've been a member of allrecipes for awhile but just within the last couple years really started experimenting with recipes. I think that each time I make something it gets better and better...practice makes perfect.

My favorite family cooking traditions
I just love, love, love Christmas baking- sugar cookies, bars, pecan tarts, wedding balls, fudge, etc. Also, every year on Christmas Eve we make homemade lasagna with salad, homemade garlic bread and a pie of some sort to top it off. My dad also makes oyster stew which only a few of us try. All of this with a nice cocktail or glass of wine...the thought of good food and my family just makes my heart warm!
My cooking triumphs
I really have never made a wonderfully extravagant meal that turned out perfectly...I'm still on the quest for this. I did, however, just recently FINALLY make a PERFECT batch of chocolate chip cookies! After batches upon batches of hard and crispy cookies, I finally made some that were soft, chewy, and tasty. I was so very proud of this achievement!
My cooking tragedies
When I was about 15 years old, I made a carrot cake from scratch. After peeling the carrots, I placed all of the peelings in the garbage disposal and ran it. Before I knew it, I felt water leaking out onto my feet from below the sink. I looked in the cupboard and the carrot peelings were coming out of the pipes along with the water and the mixture of water and peelings poured out onto the kitchen floor. My, was that a mess to clean up! The cake turned out great though! ha

Grilled Fish Tacos with Chipotle-Lime Dressing
This marinade is AWESOME! I marinated some Swai fillets overnight and they came out very flavorful. I have made the dressing from this recipe before which is very good but this time made the corn salsa from the 'Fiery Fish Tacos with Crunchy Corn Salsa' on this site. The combo was great!

Fiery Fish Tacos with Crunchy Corn Salsa
I gave it only 4 stars since I've made the tilapia using this recipe and have found that it is not very flavorful. This time I used the fish marinade from 'Grilled Fish Tacos with Chipotle-Lime Dressing' recipe on this site and made the corn salsa from this recipe to serve with it which was great. I added in 1/2 of a jalapeno as well as two cloves of garlic, minced. Very good! By combining the two recipes, it makes for very flavorful fish tacos!

Mexican Style Shredded Pork
I rubbed the pork with cumin and chili pepper and marinated it overnight in the chipotle sauce along with minced garlic and onion and the two cans of green chilies. Added a little water to the crock pot and cooked on high for 6 hours. The meat was VERY tender- stirred the meat around with a fork and it shredded right in the crock pot. The taste was delicious- served along with cilantro lime rice, sliced avocado, shredded cheese, tortillas, and sour cream. Will definitely make again!
