About this Cook
I am a happy, fit, volunteer extraordinaire who is adjusting to life in a small town after living most of my life in Toronto. I am engaged to be married to the best guy in the whole world, and he loves to eat anything that I cook/bake with relish! I have loved being in the kitchen since I was a little girl and it is my favourite room in the house... I have two cats who love to sit and watch me while I cook; they are the best supervisors in the world, much nicer that Gordon Ramsay on Hell's Kitchen!
My favorite things to cook
Bake anything especially cakes and pies. I love cooking in the Asiatic, Indian, Caribbean and Italian style.
My favorite family cooking traditions
Queen Elizabeth Cake, Gumdrop Cake, Pumpkin Cake with Coconut/Buttercream icing, Salmon patties, and Roastbeef studded with garlic cloves to name but a few! I have had Queen Elizabeth Cake for my birthday since forever!
My cooking triumphs
Pumpkin Cake with Coconut/Buttercream Icing, Shanghai noodles, Hungarian Goulasch, Spaghetti sauce that the men in my friend's firehall just love, Shrimp in Cream/Dijon sauce; the list could go on.
My cooking tragedies
Angel food cake that exploded in my oven, Blueberry pie that had pastry that was too short and it crumbled when I served it, spaghetti sauce that burned!

Triple the Ginger Cookies
These are the best ginger cookies I have ever eaten! My nephew is wheat intolerant so I made the recipe with spelt flour (in the same proportion) and they turned out the same as if they were made with all-purpose flour. My husband, family and colleagues all love these cookies! Thank you so much for posting this recipe so we can all share in consuming these little nuggets of gastronomic joy!

Pecan Pie VII
I made this for a dinner with close friends and their children. EVERYONE loved it! I will make this pie repeatedly because it was so delish!

Oatmeal Chocolate Chip Muffins
These muffins are just so yummy! I only used 1/2 cup brown sugar and substituted coconut for the pecans and didn't top them with brown sugar. They tasted amazing! I also used bigger muffin cups to make six instead of 12.
