Raspberry Almond Muffins
This modified recipe turned out really yummy! I didn't like the idea of adding water, so I happened to have almond milk on hand and used that instead. I probably used a little more toasted slivered almond in the muffin, then sprinkled untoasted on the top which then lightly browned to perfection. I halved the recipe, but used a full egg and a half cup of sugar. I broke up the fresh raspberries I was using into pieces, which worked beautifully to spread out the color and flavor. I baked them in a "muffin-top" pan for about 12 minutes. Afterwards, just to go over the top, I make a cream cheese frosting (like a Cinnamon roll icing) to spread over the top. Possibly the tastiest muffin I ever made! :)

Mocha Chocolate Chip Banana Muffins
This was DELICIOUS! I was trying to make a chocolate chip muffin with flavors that my children would enjoy, so I was worried about adding the coffee but it was not dominant. I probably added a bit more vanilla, and I was leery about all the butter, so I cut it in half and didn't replace it with anything because the batter looked moist enough. I used half brown sugar, half white sugar. The taste? Nearly identical to a Nestle tollhouse cookie! YUM!

Eggplant Parmesan With Easy Homemade Sauce
Outstanding! I've never made eggplant parmesan before because it seems daunting and difficult, but I always order it at restaurants because I love it. I got a beautiful eggplant at the Farmer's market and felt it was time to try. This recipe was easy, delicious, and didn't take very long. I didn't have italian seasoned bread crumbs, so I used panko breadcrumbs mixed with italian seasoning and extra garlic powder. It was probably my favorite new recipe of the year!
