Easy Garlic Broiled Chicken

Great taste and very moist! I used olive oil instead of butter, 1/4c + 2 T. Not too salty. Baked boneless thighs for 35 min plus a few minutes of broiling for a light char. Big hit with my 1 year-old!

Lemon Lavender Avocado Loaf

Lemon Ginger Shrimp

Left out the cilantro and used 2t powdered ginger instead of the fresh. Sauteed in pan instead of grilling. Marinated for about 24 hours. Hubby said it was one of his best meals EVER! Fast and easy!

Cornmeal-Crusted Catfish

I oven-fried -- my batter ended up slightly soggy. Not sure if I sprayed too much or too little. The cornmeal adds a nice crunch on its own anyway! Got a subtle but nice kick with 3/4 tsp cayenne instead of the 1 tsp Cajun seasoning. Will use again!

Chocolate Chocolate Chip Cookies I

Very very good! Exactly 8 minutes gave a crispy outside and gooey inside. I did half vanilla extract and half mint extract (1 tsp each) and used mini York peppermint patty baking bits instead of chips. It's chocolate, it's peppermint, it's delicious, it's very refreshing!

Deep Fried Dill Pickles

Very tasty. I double battered as suggested, batter-flour-batter-flour, then placed on parchment paper and oven-fried at about 375 for 12 minutes on each side, spraying each side with Pam. Very crispy, easy cleanup, and minimal guilt!

Peppermint Fudge

Taste was good, but I guess my cream cheese wasn't soft enough... my bottom layer was all crumbly, but top layer turned out great with room-temperature cream cheese.

Lemon Cranberry Muffins

Very good! I made them in my muffin top pan, for around 12-15 minutes, using 1.5 tsp of orange extract plus a generous shake of dried orange zest. And cherry craisins work great too! Nice and moist with good flavor. Thanks!
