Guacamole

This recipe is amazing and we make it for all family events. We dice a jalapeño pepper for more spice. It is by far better than guacamole from any restaurant we've tried!

Quick Bean and Turkey Italian Meatballs

These meatballs were delicious and so moist. The beans added an amazing flavor. I probably could have halved the recipe though because this made A LOT of meatballs.

Baked Dijon Salmon

Excellent! My fiance is a huge salmon fan and he loved it. I just used chopped pecans instead of finely chopped and we both loved the flavor and texture the chunks of pecan added. I will be making this again!

Triple Chocolate Tofu Brownies

Delicious! These are the best brownies I've ever made. I used the 365 every day value dark chocolate chunks (I got them at Whole Foods) and used Ghirardelli for the bittersweet squares. I also used the whole package of tofu as others have mentioned. I think next time I'll try using coconut oil rather than olive and stevia rather than white sugar. Thank you for this awesome recipe!

Fabulous Fajitas

Yum! I am not much of a fajita person but my fiance loves them so I gave them a try and they were far better than expected. He kept mentioning that the veggies were so "savory". I will be making these again!

Pesto Chicken Florentine

Great dish and super easy. I made a healthy version with the following alterations: I used 100% whole wheat penne which is so delicious. I only used 2 chicken breasts and used light alfredo sauce and lots of fresh spinach. I added onions, green pepper and red pepper. I used a 12 oz box of penne which made enough for my fiance and I to have lunch the next day as well.

Monster Cookies VI

This a great monster cookie recipe. My only comment is for a soft cookie take the first batch out at 12 minutes even if they look undercooked. See how you like them after they settle and adjust the time if needed. Mine were a bit crunchy for my liking even after 13 minutes.

Tomato Basil Salmon

YUM. Such a great salmon recipe. Definitely will be making this again. I followed other reviewers advice and did a layer of parmesan directly on the fish as well as on top of the tomatoes. Great flavor combinations!

Spicy Chicken Breasts

Makes a good spicy rub. My fiance and I love spice so it wasn't too spicy for our tastes but I can see that it would be too spicy for the average. Unless you're a spicy lover like us I'd suggest trying less cayenne and go from there.

Halibut with Rice Wine

Yum! This was a great way to use some of these ingredients we don't use often. I used cod because the store was out of halibut. Delicious! We poured the excess sauce over broccoli which was amazing. This will definitely be a frequent at our house.

These are great. I'd suggest eating fresh out of the oven for best texture. I was expecting good results but these actually surprised me with the amount of flavor. And low calorie. Can't complain about that!
