Easy Corn Pudding

The eggs help bind and you must add garlic and mild green chilies to this for flavor! Goes great with any BBQ meat! I also add shredded sharp cheddar!

Famous Queso Dip

Old OLD recipe! At the very least, you have to add the juice from the Rotel or some milk to make it not so thick! I melt it all first, then add the liquids to thin to proper consistency. I have also made some additions and improvements over the years: an 8 oz block of cream cheese, a large can of chopped mild green chilies, 1 tsp cumin, 2 tsp garlic powder or 2-3 cloves, crushed. SO GOOD! A hit everytime!

Cream Cheese Arepas

Haven't tried this recipe because I don't have and can't find an arepas maker. Is there any place to buy one, or can they be cooked any other way? A griddle, etc.? I love arepas and would love to be able to make them!

Quick Taco Salad

The original recipe for this came out in the 70's, I believe, and I think it was published by the folks who introduced Catalina salad dressing - the dressing the original recipe calls for using. It is delicious on it! Also, French and 1000 Island. And the original recipe also uses a can of drained kidney beans. We like black beans or Ranch style. Such a great recipe! I never buy taco seasoning...usually just add what I have on hand, garlic powder, cumin, chili powder, all the things in taco seasoning anyway - and less expensive. You can also add salsa to the meat after it is browned. Doing that with tacos also helps your meat to bind together and not fall out.

Rita's Spinach Casserole

If you r kids don't like spinach, don't put the layer of spinach on top. Mix it in with the sauce! Harder to spot the "green stuff" that way! :-)
