Ranch Oyster Crackers

Reviewed: Jun. 18, 2011
Followed directions to a T, and baked at 280* for 10 minutes per someone's recommendation. Actually, I preheated oven, put the crackers in, then shut it off. They were gone by the next day!!

Bacon Ranch Pasta Salad

Reviewed: Jun. 5, 2011
Excellent - even my kids loved it! I admit that I did use 1/2 cup mayo and 1/2 cup of sour cream, and I didn't have any tri-color rotini, so I just used regular. I also added more cheese.

Super Easy and Spicy Fried Pickles

Reviewed: May 30, 2011
Excellent! After I patted the pickle slices dry, I put them in flour; then egg; and then the bread crumb mixture. I then put them on a parchment paper-lined pan and put them in the freezer for a couple hours. I think that really helped the breading to stay on. You may also omit the pepper(s) if you want it kid-friendly or you don't like spicy. Minus the peppers, it tasted just like those at the Quaker Steak and Lube restaurants! I found that the dill pickle slices work much better than spears.

Chicken Muffuletta with Spicy Olive Relish Mayonnaise

Why would anyone - who hasn't tried it, and doesn't want to - rate this? I'm giving it 5 stars because it sounds AWESOME! And to the reviewer, here's some advice: to make it not spicy, omit the jalapeno!!!!!!

Spinach Cheese Tortellini

Reviewed: May 6, 2011
Awesome dish! The only major thing I changed was that I used a container of the new Philadelphia cooking cremes - I used the garlic flavor - and omitted the Italian seasoning. I also used a can of diced tomatoes with basil and garlic; and used dried minced garlic in place of the garlic salt, because I thought there was enough salt with the butter. Definitely not diet friendly as is....I'm sure you can tweak it to adjust to lower calories!

Soft Pretzels I

Reviewed: Apr. 2, 2011
The only difference I did was bake them at 400 degrees for 5 minutes; then turned the pan and baked another 3 minutes - because the first time I made them at 475, the batch came out very dark and hard. I also made one batch of brushed-on butter and coarse salt, and one batch with brushed-on butter and then sprinkled cinnamon sugar. The kids LOVED this, tasted like Monkey Bread. I also placed them on parchment paper, and sprayed that with cooking spray. They did not stick at all.

Very good, and easy. I spread chive cream cheese and then just used my judgment spreading the bacon and cheddar. Also used real bacon bits.

Italian Spaghetti Sauce with Meatballs

Reviewed: Aug. 23, 2010
Good base. I have a big family and doubled the recipe; I used 2 28-oz cans of crushed tomatoes rather than whole; 1 15-oz can of diced tomatoes with onion and garlic; 2 15-oz cans of tomato sauce; and 1 can of tomato paste. I was afraid that adding another can of tomato paste would make the sauce too thick once I added the meatballs. Other than those changes and a sprinkling of Italian Seasoning, I made this recipe exactly as described. We all loved the meatballs, and the sauce was tasty. I also made some italian sausage in the oven to serve with the spaghetti...I bet that would be awesome thrown (precooked) into the pot in the last 15-min to 1/2 hour!

Spinach and Feta Turkey Burgers

Reviewed: Jul. 28, 2010
Very good - I added some onion powder, and about 1.5 tbsp of bread crumbs. Mine did stick, even though I grilled them on Pam'ed tin foil sheets, but they are still very tasty. I think they could use more than 2 gloves of garlic....maybe even some parm cheese? I foresee jalapeno peppers mixed in the next batch!

Classic Macaroni Salad

Wonderful recipe! Got lots of compliments on it. I made the liquid mixture, but I put about 3 tbsp of mayo into the cooked noodles, and then about 3/4 of that mixture into the noodles. I also added tuna and hard boiled eggs. Sprinkled pepper and paprika on the top!

Bread Machine Pizza Dough

Reviewed: Feb. 27, 2010
Easy to make, and so much better than those store-bought doughs that are either in the deli case or freezer. Very similar to the dough my parents used at their deli for pizza and calzones. I did not add extra spices - I bet it would be good! - and I did add an extra 1/2 cup of flour after reading complaints about it being sticky. I also sprinkled a little cornmeal on the pan before spreading the dough. I have commercial pizza pans, so I did not have a problem with it being too thick at all....I didn't have to precook it before adding toppings. I also used fresh beer. Thanks for the recipe...definitely a keeper!

Ham and Swiss Casserole

Reviewed: Feb. 16, 2010
I added some sour cream; also some red/green chopped peppers, and also let the mix cool down before adding the egg and milk. This isn't a bad base for something, but on its own...it's not very flavorful at all. My husband said, "You don't have to make that again!"

Chocolate Covered Cherries

Reviewed: Jan. 3, 2010
I'm not a fan of these, but everyone else who tried them said they were good. I followed reviews along with the recipe. I put each chocolate dipped cherry into a mini muffin liner before refrigerating. I also recommend to definitely refrigerate these for at least a day before dipping. Even then, some fell apart once it hit the melted chocolate.
