We just became vegetarian and I promised DH that I would still make satisfying, tasty food. I made this for supper and it was excellent. Instead of chicken broth, I substituted 2 cans of vegetable broth. I used 1% milk rather than 1/2&1/2 to save on calories. Also, I used 1 package of oyster mushrooms and 1 package of button mushrooms. It is so yummy, just perfect. When I told DH what I was making for supper, he said he'd just eat a sandwich. But after smelling it, he couldn't resist and had a bowl. He's eating the third bowl as I type and says it's a keeper. Thanks a million!
