Chef John's Mini Christmas Hams

The ham's were moist and tender and we liked the flavors of the spices. But, it was way too salty. I did rotate the hams the first night and cooked them the second day. I don't know if reducing the salt would be the best or rinsing them off when you take them out of the brine. I used sea salt and did pat them as dry as possible. I suggest trying them before you use them for a special dinner.

Favorite Barbecue Chicken

We really enjoyed this sauce and the chicken was very moist. I made this with less sugar by using sugar free ketchup, Splenda brown sugar and didn't add the honey. It was plenty sweet enough without the added honey. I also put in 1/2 tsp of an oriental chili/garlic sauce and that added a little bit of heat to it.

Cream of Mushroom Soup I

We just became vegetarian and I promised DH that I would still make satisfying, tasty food. I made this for supper and it was excellent. Instead of chicken broth, I substituted 2 cans of vegetable broth. I used 1% milk rather than 1/2&1/2 to save on calories. Also, I used 1 package of oyster mushrooms and 1 package of button mushrooms. It is so yummy, just perfect. When I told DH what I was making for supper, he said he'd just eat a sandwich. But after smelling it, he couldn't resist and had a bowl. He's eating the third bowl as I type and says it's a keeper. Thanks a million!
