Caramelized Spicy Pumpkin Seeds

Yum! Not SPICY but flavorful. I cut the sugar down by 1T and used a 50/50 mix of white to brown sugar. Worked out great!

Blueberry Zucchini Bread

Family approved! I used 3 cups of zucchini, 2 cups of white sugar and 1/4 cup of brown. I made muffins instead and baked for 25 minutes at 350. Yum! Great way to use up zucchini.

Spanish-Style Oxtail Stew

This was awful. I served boxed Mac and cheese to the kids while my husband did his duty. A disappointing waste of expensive meat. I did everything exactly per the directions. Move along and find another recipe for your oxtails.... Any other one.

Spinach Quiche

Universal approval by my husband and my relatively picky kids, so that's notable! I really liked it. My only changes were adding an extra egg because four just didn't seem like enough - probably would've been fine but I will keep it at five next time too. So good, definitely a keeper of a recipe!

I made the dough in my bread machine, by adding wet ingredients first then dry. The kids really liked it. Next time I will use pork sausage instead of beef. I also will try it with pastrami and sauerkraut with cheese.

Flatlander Chili

AWESOME chili! I made as directed except: used 1 lb ground beef, 1 lb pork sausage. Substituted tomato sauce for tomato juice, and diced tomatoes for tomato sauce. I also used dried beans that I boiled separately and added at the end, because the texture is superior to canned beans. Everybody in the family loved this!

Parmesan Spinach Balls

Taste would've been 3/5. These really stuck to the baking sheet even though I sprayed it. So badly that the bottoms came off of several. I didn't bother making the other half of it and chucked it all in the trash; the taste was OK but this recipe lacked something...

made exactly as described. Smelled nice. Was EXTREMELY mild - could use a lot more spices. I was disappointed. My kids ate it the first night, but wouldn't finish the leftovers. Had to throw the rest away - and this makes a LOT. Won't be making again.

Tofu Parmigiana

2/4 kids really liked this; my husband did not and I thought it was mediocre. It still was very clearly tofu; it was not a great treat. We won't be making it again. If you're just looking for a way to use up some tofu like we were, keep looking!

Real Sopapillas

Excellent! I made these for my son's Mexican themed kindergarten potluck and they were gone in a flash. I fried them on my stovetop in a pan with oil set on medium heat. Dusted w/powdered sugar & topped w/honey. The house smells great! As for reviews stating they're inauthentic - these are just like the ones you get in a restaurant.

Strawberry Chocolate Mousse Cake

Fantastic! Very simple to make. I used crushed oreo cookies w/o the centers for the bottom. Topped with canned whipped cream. Next time I'll put strawberries along the bottom as suggested by another poster, I think that'd taste delicious. Also, I used "whipping cream" instead of "heavy cream" and it worked out just fine - the recipe calls for "heavy whipping cream" and it all worked out fine.

This was delicious! I used only a fraction of the syrup called for however - saved the rest as most of the first batch got eaten today by friends and coworkers! I also had only 3/4 cup of yogurt but went ahead anyway. I upped the coconut slightly and ended up having to cook it an additional 6 minutes, and then under the broiler for about 45 seconds.

Bean Burrito Casserole

Awesome recipe! My husband was skeptical when he heard the name but LOVED it and said to give it 5 stars or a 9/10. Made some changes to the recipe though - doubled the sauce recipe; used 7oz green chiles, 2 cans mushroom soup, 1c lite sour cream, added a can of corn and 2 chicken breasts cut up and sauteed in olive oil w/garlic. Fabulous!

Blackened Salmon Fillets

FANTASTIC. I omitted the cayenne pepper in the interests of kids eating it and it wasn't missed at all. I also used only 3-4T of butter instead of the whole 1/2 cup - no need to drizzle butter all over it - it's already being cooked in it! Again - WONDERFUL recipe!

Apple Crisp II

Everything an apple crisp should be! It does not need the water - I left that out completely. I did a 1.5 recipe of the crisp portion and it turned out fantastic. Next time I will add some more oatmeal. Also, I will use less sugar on the inside - maybe 2/3 or 1/2 cup instead of the full cup - it doesn't need that.
