Balsamic Chicken with White Beans and Spinach

Oh-my-gosh, YUM! AND healthy! I took the advice from previous posters’ suggestions and added chopped onion and fresh shrooms. Also, I didn’t have white kidney beans on hand, so I used red ones. I have one suggestion (and I only add this because of the folks who have previously given low ratings and negative comments): This is a big boy/girl dish. If you are looking for an alternative to Sloppy Joes or Buffalo Wings, this may not be the recipe for you.

Layered Vegetable Enchilada Casserole

Very easy and yummy. I made it twice; first, exactly as written, and then with cumin and red pepper added (as DLORD suggested). The kicked-up version was better.

Delicious Black Bean Burritos

Oh so yummy! I followed the recommendations of several reviewers and added cumin, corn, and diced green chiles. And I also doubled the recipe, and my wife and I were SO glad that I did!!

Grilled Chicken and Portobello Lasagna Rollups

This is GREAT! My wife and sis-n-law said they don't want to have regular Lasagna ever again. Before making it, I would suggest reading Bailey Martel's comments (the most recent prior to mine). One note about pine nuts -- they were great when it was fresh, but on the scant few rollups that were left over (and I'm all about leftovers), the nuts morph into something that my wife and I didn't care much for. Next time the nuts go on only half.

Belgian Salad

This stuff is great. The first time I made it, I followed the recipe exactly. The second time,(and every time after!) I have used olive oil rather than veg oil; and apple cider vinegar instead of white... (and a full tablespoon of black pepper to contend with the sweetness.) Yummy!
