Cola Easter Ham

Great recipe. Used it for Easter ham prepared by dad and this was awesome. I substituted Dr. Pepper for the cola and that really gave it a great sweet taste. THANK YOU!

Cherry Glazed Salmon

Ok, we loved this, but there a few significant alterations. 1. we used steelhead - love living in the Pacific Northwest; 2. Use "Oregon Fruit Products" - Pitted Red Tart Cherries in Water; 3. Used the water from the canned cherries as it was just under 2/3rds of a cup of liquid with an added 2 shots of brandy and a splash of a dry white wine. THIS WAS AMAZING...Will use this repeatedly and often.

Cinnamon-Apple Cake AKA Hanukkah Cake

Absolutely loved this. It's simple, straight forward and delicious. I will be making it as a gift cake for Christmas, hope that that is ok. OH - and absolutely spot on about how long it takes to cook. Follow that and the clean toothpick test.

Cherry Bliss Brownies

I liked this. I used Oregon Pitted Cherries, thinking it was cherry filling, and you can imagine my shock when I dumped the contents of the can with the juice and all onto the marbled brownie mixture...drained to the best of my ability the juice and proceeded. It turned out really, really well. So, well, that this is one I will add to my "Dad's list" of recipes. I had a piece of the final product and I loved it. I used a 9 x 9 and the result was more cake like. Thanks for a great addition to the recipe book!

Pesto Chicken Florentine

This was quick and easy. A couple notes...First, the picture shows tomatoes...so bought Roma's and cut up three...tossed in at the very end for a few quick seconds with meat and spinach...then mixed into the pasta and pesto. I really liked this dish, filling, but in a light way. Not sure the kids liked it...but it's on my to keep and make again list. OH...Forgot the cheese...dang it...but good none the less.

Baked Penne with Italian Sausage

This was a great meal. I would argue it takes a bit longer than 15 minutes to put together...say more like 25 or so for a single dad with little help from the kids. BUT, the kids loved it. SO, it went into the hand written recipe book. Very good meal with left overs. YES!
