Amish Breakfast Casserole

Excellent breakfast casserole. I love using the low fat cottage cheese instead of heavy cream like others call for, you could even use egg beaters of course to be even healthier. I don't care for the way bacon turns out in casseroles so I used tiny cubed ham and left out the swiss, upped the cheddar. I also added two teaspoons of kosher salt and a good bit of pepper. I will definitely make this again, very easy to throw together!

Roasted Sweet Potatoes & Onions

This is now one of my favorite side dishes an a refreshing alternative way to make sweet potatoes. I tried this the first time using a few tablespoons of orange juice and a little brown sugar as I didn't have Amaretto on hand. I used Amaretto the 2nd time, it's good either way but I preferred the O.J./brown sugar way best.

Figs with Goat Cheese, Pecans and Bacon

These are excellent - you can experiment with other cheeses as well. We had these at the Cheesecake Factory (one of their new small plate appetizers) and fell in LOVE so I had to find a recipe. They make theirs with parmesan but I think the goat cheese is even better for more contrast.

Sweet Potato Pie II

This was an excellent recipe, especially since I had all ingredient on hand for once! I like a spicier pie so I doubled the spices and then I sprinkled a large amount of brown sugar all over the top of the pie - it gave it a delicious crispy crust on top and looks nice too. I would definitely recommend creaming the butter and brown sugar before adding the other ingredients in step one, or else the butter even if soft, doesn't mix very well once you have all that liquid in there. That may be a no brainer but it wasn't in the directions.

Tart Lemon Triangles

My family loved this, and requested it again for Mother's day. The crust is delicious! I probably more lemon juice and zest than called for (not sure how much, just to my liking) and I did individual tarts. Crust and filling turned out lovely.
