Salmon and Spinach Fettuccine

This was a big hit. I made this on the fly and did not have a few ingredients. I was missing capers and I used grilled salmon, and dried oregano. I can't wait to try again with capers ~ I know it will be even better!! I did spill some of my white wine in as it did get too thick ~ which is weird considering how little flour there was. My girls devoured this...and they claim to hate fish!

Chicken Tortilla Soup II

Our new favorite! The first time I made it I followed the recipe exactly except that we added the tortillas at the end because we like them crunchy. We ran out of tortillas ~ so for the left overs we used tortilla chips, which actually tasted better than the ones I made, so I don't fuss with that anymore! I also skip the cayenne and let each person stir in red pepper flakes to their bowl if they want to add heat. To serve we crush a handful of chips and then add cubed mexican cheese or montery jack cheese and a few slices of avacado, a scoop of soup then top with sour cream! THE BEST! YUM! It is just like we had at a nice resturant in Mexico!

Kentucky Bourbon Sweet Potatoes

This is the recipe I have used for years and have become famous for! Except....mine calls for 1/3 cup of bourbon and 2 eggs and you mash it all together and then bake it. Little kids don't care for the bourbon taste but everybody else does! I am excited to try slicing the potatoes this year, this is one of the dishes I look forward to every year!

Amy's Cilantro Cream Sauce

every time I make this it is a huge hit. The only change I make is I use 4-5 fresh tomatilo's instead of the salsa and process it all until fine. I serve it with chicken, steak and my kids love it with chicken nuggets! this version is less hot than the original = group friendly!

Chocolate Banana Bread

Ratatouille

Wow, even better than I thought it would be! I made this in the middle of winter and was able to find all the vegetables. I bet this would be even better with fresh summer veggies! I used a little more cheese than the recipe called for, and yellow squash would be fun. I have a picky family.. I think they tried it because of the movie, but ate it because it was so good!

Blue Cheese Stuffed Mushrooms with Grilled Onions

This recipe was a hit. I brought it along to a friend's "pot luck" as they were grilling the steaks. I cooked it in a frying pan on the stove as I didn't have the grill going. apperance wasn't very nice but they were gone right away. Have made several times since, always on top of the stove.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

We liked this so much I made it twice in one week! I used cabernet instead of port and it was perfect. The sauce is amazing and would be good on anything! I forgot to put this in my recipe box before, so glad I finally found it again!
