Salmon and Spinach Fettuccine
This was a big hit. I made this on the fly and did not have a few ingredients. I was missing capers and I used grilled salmon, and dried oregano. I can't wait to try again with capers ~ I know it will be even better!! I did spill some of my white wine in as it did get too thick ~ which is weird considering how little flour there was. My girls devoured this...and they claim to hate fish!

Chicken Tortilla Soup II
Our new favorite! The first time I made it I followed the recipe exactly except that we added the tortillas at the end because we like them crunchy. We ran out of tortillas ~ so for the left overs we used tortilla chips, which actually tasted better than the ones I made, so I don't fuss with that anymore! I also skip the cayenne and let each person stir in red pepper flakes to their bowl if they want to add heat. To serve we crush a handful of chips and then add cubed mexican cheese or montery jack cheese and a few slices of avacado, a scoop of soup then top with sour cream! THE BEST! YUM! It is just like we had at a nice resturant in Mexico!

Kentucky Bourbon Sweet Potatoes
This is the recipe I have used for years and have become famous for! Except....mine calls for 1/3 cup of bourbon and 2 eggs and you mash it all together and then bake it. Little kids don't care for the bourbon taste but everybody else does! I am excited to try slicing the potatoes this year, this is one of the dishes I look forward to every year!
