Chantal's New York Cheesecake

The best Cheesecake I have ever made. I followed the tips and advice from the website and did not get any cracks at all. The cheesecake came out picture perfect. I followed the recipe exactly. With a few changes. 1>Used the halved version of this recipe, and made it in a pre made graham cracker crust. 2> Filled a cake pan with water and put it underneath on the bottom rack while baking. (I even peeked twice for a couple of seconds to check the doneness – still no cracks.) 3> Then : Cool 3hrs in the oven, cool 3hrs on the counter, wrap and chill for 3hrs in the fridge. Came out perfect! Also making sure all ingredients are at room temp is a must.

Sweet Potato Pie from EAGLE BRAND®

Okay so this is my first sweet potato pie. I decided to use one reviewer’s suggestion to use canned sweet potatoes and made two pies using a 2lb can, which I could have divided to make a single pie. However, because the canned potatoes were not hot or even warm - the ingredients didn’t combine as I had thought. So before I added the eggs - I popped the whole thing in the microwave to incorporate the milk, potatoes and spices then added the eggs and beat with my electric mixer – this made the consistency alittle smoother. Tip : I used “Apple Pie” spice – which is actually cinnamon, nutmeg, and allspice combined. Also I did not have the grated orange peel so I used orange juice instead. It came wonderful and my husband loved it. Next time even if I do use canned - I will heat the potatoes up first.

Camp Cornbread

I loved this cornbread recipe. It was awesome. I followed it as directed except 1> I did not add any sugar as suggested by other reviewers using the “sweetened” creamed corn it came out sweet enough. If you prefer sweeter corn bread I suggest adding sugar to taste 2> Also per other reviewers I used the Jiffy mix. 3>I also cooked it for about 30mins and then let it sit on the counter top for 5-10mins. It was sooooo warm and gooey, even better the next day! My husband who had never tasted cornbread with real corn in it before was skeptical at first but when he tasted it he was really really pleased. Using a 8x9 pan it was still thin so next time I will use double the recipe. But great recipe.
