Gumbo Style Chicken Creole

This is a keeper. Replaced the tinned mushrooms with fresh ones and added1/2 a tin of mushroom soup. Did not have diced tomatos with chiles just regular diced tomatos so I added a chopped jalopeno (seeds and all)

Black Bean and Sweet Potato Quesadillas

Added some cooked (with taco spice and 1/2 a diced jalopeno) and shredded chicken breast. Did not care for the sweet patoto taste, willreplace it with refried beans next time

Mushroom Chicken Dijon

It was very good but I tweaked it a bit. I removed the chickento a seperate dish and then fried 4 strips of bacon which I added with the green onion garnish later. After removing the bacon I used the bacon drippings in the pan to fry the mushrooms, then addes 1 cup of sour cream diluted with 1/2 a cup milk and added the mustard.

Tex-Mex Pork

Added half a tin each of corn kernels and chick peas for a more Mexican look and replaced the tinned jalopeno with a fresh one. Served it with sour cream, grated cheddar, chopped cucumber and tomato in pita's. Wonderful!

Lime-Marinated Grilled Salmon

I mde it in the oven 25 min at 350. And turned out just fine. I turn it into a sweet and sour. By adding a tbl spoon apricotjam. Also I did not throw away the marinade, I baked it in the marinade. What will improve it to achieve taste I was trying for would be to reduce the lime (it was just a tiny bit too pronounced) by 25% and I will increase the jam to 2 tbl spoons. Garnished with green onions

Garlic Mustard Ground Beef

Will do it again, thought that Dijon mustard will be overwhelming at 1/4 cup so I halved it, next time I'll do the 1/4 cup since it was not all that prominent. Should cut back on the garlic though. Also I started it with an onion, sauteed in olive oil.
